Yummy Bok Choy Salad

Garden Fresh Tomato Soup

Peach Cobbler I

Reduced butter to 4.5 Tbsp, put 1/2 tsp cinnamon in the peach mixture in addition to the 1 tsp in the batter, and baked in an 8x8 pan. Expected to need to increase baking time significantly due to the smaller pan but it was done in 50 min. PERFECT.

Turnip Souffle

Added about 2 Tbsp minced onion and 2 Tbsp parmesan to the turnips after mashing. Didn't have enough turnips to equal 1.5 lbs so I threw in a potato. Came out great.

Parsnip Pancakes

Amazing! I had some trouble keeping them holding together. I switched to a nonstick pan for my second batch since the first few pretty much fell to pieces. They held together better in the nonstick pan. Still, they were incredibly delicious. I can't wait for more parsnips in my CSA box to make these again.

Pasta with Arugula Pesto

This was fabulous. I left out the cayenne pepper so my picky toddler would eat it. He loved it and so did we. I'm going to make a few more batches to use up my bunch of arugula and freeze them.

Cinnamon Apple Muffins

Great muffin. I didn't have ricotta, so I just increased the canola oil and milk slightly and they came out perfect. I accidentally put all 3 tsp of the cinnamon into the batter instead of reserving some and I'm glad- the extra cinnamon boost was good.

Amazing. This salad is gorgeous, elegant, so delicious. I will keep this in mind next time I am cooking for company. So far, this recipe is my favorite way to eat beets.

Lemon Yogurt Muffins

These are good. I agree that the muffins themselves are not very lemony, but the lemon juice topping makes up for it, especially with the holes poked in the top so the lemon flavor permeates the muffin. Be sure not to skip this step!
