Mom's Ginger Snaps
These were good, but I pulled them out at seven minutes and let them sit on the rack for ten to "continue baking" because I like them to be tough on the outside and soft on the inside. I baked about 200 of these, made half of them by the recipe and the other half a little soft, and they were excellent both ways (: they are sure to be a hit at my thanksgiving dinner!

Paul's Pumpkin Bars
These were too "cakey" for me too, so I also cut the eggs down to three and used 30 ounces of pumpkin. I also used a maple cream cheese frosting for these, by using 4oz of cream cheese, 1/2 a cup of butter, 2 teaspoons of vanilla, three cups of confectioners sugar, and a tablespoon of maple syrup. It was just enough to make it a breakfast bar, but just sweet enough to snack on throughout the day! So good :)

Pumpkin Dip
It's got a strange taste, however, it's a very good dip. Other reviewers are spot on when they say you can't eat a lot of it. I added just a little bit of extra cinnamon and 1/4 of a cup of extra pumpkin. We ate it with my homemade ginger snaps and granny smith apples. I just made 24 cups of it for Thanksgiving since we have a huge gathering of about 30 people, and I have a feeling it will be more than plenty.
