Butternut Squash Bisque

Awesome recipe!! I did take the advice of the others and roasted the squash and used half and half. I think I added a little too much half and half because it came out too runny to be a bisque but too thick to be a soup. It was still delicious and I ate mine with Zesta oyster crackers which are nice and buttery...good compliment to the soup. Enjoy!!

Broccoli, Rice, Cheese, and Chicken Casserole

Great recipe! Based on the recommendations, here's what I did: I used fresh chicken cutlets (seasoned with seasoning salt and pepper, and boiled in water and onion to save on cooking time and I didn't want the chicken to dry out in the oven) Brown rice (which takes FOREVER to cook), Switched the cream of mushroom for cream of celery (hate 'shrooms) Added colby jack (my favorite cheese) to the soup mixture instead of using processed cheese. Tastes very homemade and rich. I ate with oyster crackers the next day. Delicious! Boyfriend LOVES!! Definitely worth a try with modifications.

Broccoli Rice Casserole

This recipe is a good start. I thought the flavor of the condensed soup was very overpowering (maybe I didn't cook it down enough??). I don't like Cheez Whiz, so I substituted shredded Colby Jack (but I'm sure you can use whatever you have on hand). I do plan on making this again because it keeps well and lasted me through the week, but I will add a little half/half to the condensed soup mixture to bring the flavor down a bit and possibly add some shredded rotisserie chicken...we'll see. Thanks for the recipe!
