Never Fail Biscuits

Reviewed: Mar. 23, 2013
Totally easy. Used the food processor to do everything, and stuck the diced butter in the freezer for about 10 min before adding, but otherwise changed none of the ingredients. I used a small Pyrex dish to cut circles since i have every shaped cutter but round. I was intimidated by cutting butter into flour after wasting an entire pound of butter trying to make a pie crust a few years back, but using the food processor and ice cold butter removed a lot of the opportunity for error.

Banana Oatmeal Bread

Reviewed: May 27, 2012
Not bad. It was kinda greasy, a little bland, kinda flat. I think with some small tweaks, this recipe will turn out to be much better.

Chocolate Butter-Creme Frosting

Reviewed: Dec. 17, 2011
I had some chocolate seize on me (whoops!) so I tripled this recipe and used my seized chocolate in place of the melted chocolate (I used about 6 oz chocolate) and it turned out wonderfully!

I made minor adjustments (added Penzeys double strength vanilla, cinnamon, nutmeg, and dark chocolate chips) and this was a great recipe!

Vegan Pancakes

Reviewed: Mar. 18, 2010
I'm editing my original review to drop a star. I made these again and they're really bland and boring. They're not too flat, but they aren't the fluffy pancakes I'm used to. The batter as written is a touch on the dry side. They even look boring - they're just whitish, flat disks on the plate. I think my first impression of them was based on the fact that they were just a vehicle for really nice toppings, and I also had to add things to the batter to get flavor out of it. I tasted one as-is today, and they just taste like flour. I really feel like this is just a good starting point, not a complete recipe. The batter as-is really *needs* the addition of vanilla and, in my opinion, some sweet spices to bring anything interesting to the table. I also feel like these may be rated higher because they're vegan, not because they taste good. My original review is as follows: These aren't bad, but they're not great. I had to add vanilla, cinnamon, & nutmeg to the batter just to get some flavor out of them. I also subbed 3/4c almond milk for 3/4c of the water, and they still lacked flavor. Not bad in a pinch, and even worth 4 stars if you top them with sliced bananas, margarine, and blueberry syrup.

The filling was a bit bland but I added some Parmesan cheese and garlic. I will make this again. These reheated nicely.

Smoked Sausage and Zucchini Saute

Reviewed: Jan. 25, 2010
I have to be honest - I wasn't really expecting much out of this but I am pleasantly surprised! This was quick, easy, and really inexpensive! I used half a can of strained diced tomato and added them to the pan during the last few minutes of cooking. I also used a low fat smoked sausage. The only thing I think this lacks is some sort of sauce. Otherwise, this is great. It's going in my rotation.
