Delicious! Very flavourful and nice and moist. I only altered one thing, adding a 1/4C of dried cranberries as well as a 1/4C raisins(I didn't have enough raisins on hand for the full 1/2C). This is a keeper!

Shrimp and Feta Cheese Pasta

Wow! This is good stuff! Here's what I did: -up the wine to 1/2 cup. -chopped up 5 roma tomatoes total. You could EASILY add more. -added a couple dashes of crushed red pepper. -after cooking the prawns and removing them I didn't bother adding more olive oil to finishe the sauce. With the extra wine added it's really not needed. -I used 4oz of feta instead of 6. It's PLENTY, and I would assume just as tasty.

Spicy Thai Coconut Shrimp

Yum! Didn't have any red curry paste, so I used about 2 tbsp regular curry paste. I also added 2 cloves of garlic. The sauce is thin, so after cooking the rice I just added it to the pan & it soaked up everything nicely.

Chicken Enchiladas I

Simply excellent! Didn't add the water either, just the right thickness without it. I also shredded the chicken with a fork after cooking instead of cubing it-makes it easier to roll the tortillas as well. Delish!

Chicken with Cashews

I thought this was pretty tasty-except for the amount of oil used-10 tablespoons! I cut it down to about 3-1 tbsp canola oil to cook the chicken, then 1 tbsp to stir fry the veggies. I didn't add a full tbsp of the sesame oil-I feel it's not really needed since it's pretty flavorful. I also would have added a clove or two of garlic and another tsp or so of curry.
