Peppermint Meringue Cookies

This cookie is so refreshing! It's sweet and minty and just addictive. I followed the recipe exactly and made 3 batches. I found too like other people that 90 minutes was too long. The first batch I finally checked at 60 minutes and they were already browning, so I turned off the oven and let them sit for another 10 minutes or so before taking them out of the oven. The second batch went in and again I found them browning at around the 60 min mark, so I turned the oven off once more. The third batch I decided to turn the heat down to 220 and they seemed to brown a lot less and I didn't feel the need to turn the oven off until around the 75 minute mark. However brown they were, the cookies were all delicious so I'm using all of them in my cookie exchange tomorrow.

Bodacious Broccoli Salad

The only thing I did different was to add golden raisins and sunflower seed. I let it sit in the fridge for 3-4 hours before tasting. My two cents are that there is wayyy too much onion and that it was too salty for my taste. Looking back on the ingredients, it kind of seems obvious that half of a red onion is A LOT unless you're using a really small one. As for the salt, with 8 pieces of bacon I'm not sure if you really need that much salt added to the dressing. I think next time I will limit both ingredients and use about 1/4 cup of onion to start and perhaps skip the salt and pepper in the dressing and just add it after the salad has had a chance to sit for a while according to taste. Hope this helps anyone who reads this review!

Portobello Sandwiches

So good! I read nitrojen's review before making these so I kept an eye on the mushrooms during the second half of cooking. Sure enough I saw tiny flames start to erupt with 1 min left in cooking time. I tried rearranging but that didn't do anything so I just took them out. Luckily they were perfectly cooked! The dressing is really delicious and combined with the caper mayo, magnificent!

Crawfish Chowder

I made this recipe for dinner tonight with the leftover crawfish tails that we had from a boil over the weekend. This recipe is delicious. I will most likely use it every time we have leftover crawfish. I read the other reviews and decided to do as suggested and double the corn and the cream cheese. I followed the recipe exactly in everything else.

Zesty Tuna Salad

I made this recipe just now and I think I'll keep it for my go-to recipe for tunafish. I made a couple changes - used more mayo for one (think about 1 tablespoon). I like the creaminess. Also, I did not have sweet relish so I used dill relish and I thought it was still good so I'll use either in the future. I chopped the onion and then rinsed it because my husband isn't a huge fan of raw onion but I still like it - so rather than forgo it completely, I rinsed it in order to mellow the flavor. I think my can of tuna was 7 oz instead of 6 but I don't think that I will ever have to change the rest of the ingredients since it was such a small difference.

Mac and Cheese Henwood Style

Delicious! The only things I did differently than the recipe was that I did not have cheddar cubes so I threw in a handful of shredded instead, and I only had mini rotini on hand so I used that instead of fusili. I love the bite that the blue cheese gives to it. I agree with another reviewer who said this is an adult mac and cheese - it might have too much flavor from the blue cheese for most kids. But my 18 month old likes a lot of stuff that most might call non-kid friendly foods, so we'll try it with him and see. I am going to make this for Thanksgiving, but this time I'll use fusili like the recipe says. Oh and also I agree with some others that a half box of pasta is the perfect amount for the amount of sauce the recipe yields.

Chicken Breasts in Caper Cream Sauce

I made this recipe tonight for dinner for my husband. It was a big hit! Very delicious and it had great flavor. I set the heat on medium the entire time bc it just seemed hot enough, and the chicken came out perfect after a full 10 min. Great crust and cooked just right, not too dry. At the last second, I decided to double the amount of cream in order to make sure I had plenty of sauce and I was really glad that I did afterwards. I served it with whole wheat penne and a medley of roasted veggies (zucchini, squash, asparagus and red bell pepper). Delicious! I will definitely add this into the mix for our regular rotation of dinner recipes.

Molasses Cookies

Loved this recipe! So delicious! I used butter since I had no margarine. The first time I tried this recipe, the cookies came out flat and ugly - but still were delicious and addictive. The second time, I used softened butter and whipped a lot of air into the butter before adding the sugar and egg using my Kitchen Aid stand mixer. Then, I also stuck the dough into the freezer for a bit to get it nice and cold before portioning and putting into the oven. Then they turned out beautiful! I will make these every year for the holidays!
