Peppermint Meringue Cookies
This cookie is so refreshing! It's sweet and minty and just addictive. I followed the recipe exactly and made 3 batches. I found too like other people that 90 minutes was too long. The first batch I finally checked at 60 minutes and they were already browning, so I turned off the oven and let them sit for another 10 minutes or so before taking them out of the oven. The second batch went in and again I found them browning at around the 60 min mark, so I turned the oven off once more. The third batch I decided to turn the heat down to 220 and they seemed to brown a lot less and I didn't feel the need to turn the oven off until around the 75 minute mark. However brown they were, the cookies were all delicious so I'm using all of them in my cookie exchange tomorrow.

Bodacious Broccoli Salad
I was a little overwhelmed by the reviews at first and not sure what to do, so I decided to make the recipe as close to what was originally stated and then make my own decisions. The only thing I did different was to add golden raisins and sunflower seeds because I love those ingredients in the broccoli salads I've had before. I let it sit in the fridge for 3-4 hours before tasting. My two cents are that there is wayyy too much onion and that it was too salty for my taste. Looking back on the ingredients, it kind of seems obvious that half of a red onion is A LOT unless you're using a really small one. As for the salt, with 8 pieces of bacon I'm not sure if you really need that much salt added to the dressing. I think next time I will limit both ingredients and use about 1/4 cup of onion to start and perhaps skip the salt and pepper in the dressing and just add it after the salad has had a chance to sit for a while according to taste. Hope this helps anyone who reads this review!

Portobello Sandwiches
So good! I read nitrojen's review before making these so I kept an eye on the mushrooms during the second half of cooking. Sure enough I saw tiny flames start to erupt with 1 min left in cooking time. I tried rearranging but that didn't do anything so I just took them out. Luckily they were perfectly cooked! The dressing is really delicious and combined with the caper mayo, magnificent!
