BLT Pasta Salad

Reviewed: Sep. 9, 2010
Use pre-cooked bacon (oscar mayer real bacon bits)! Also, added chopped green onion instead of regular onion. It adds a beautiful green where the lettuce usually does in a BLT. Shredded cheddar or colby jack cheese is wonderful added, too.

Man Loaf (Variation of the Meatloaf)

Reviewed: Aug. 11, 2010
I loved it, except the shredded swiss on top. You really have to like swiss--and I only used 2 1/2 cups. It was too much swiss, and it became very hard like a crust.

Slow Cooker Bean Casserole AKA Sweet Chili

Reviewed: Mar. 22, 2010
Good, but too sweet and lacking too many other ingredients to be called chili. More of a side dish.

Guy Approved Meatloaf

Reviewed: Jan. 5, 2011
I followed the directions exactly, and it turned out mushy in the middle, burned around the bottom & sides, and appeared under cooked on top. I took foil off at an hour and a half, then broiled for a few minutes. After broiling, the Bacon and top looked better, but for me the texture was still mushy. My husband liked the un-burnt parts though.

Easy Honey Mustard Mozzarella Chicken

Reviewed: Nov. 5, 2010
I liked everything about it, even re-heated, except the lemon pepper. I would not recommend pairing honey mustard and lemon pepper ever. It was a weird tangy taste which is not meant for chicken.

Honey Ribs

Reviewed: Sep. 22, 2010
My husband liked them, but I feel like they lacked flavor throughout. There was plenty of flavor on the outside, not enough overall.

Seasoned Turkey Burgers

Reviewed: Oct. 2, 2010
The burgers were extremely small after they were cooked, and I had made them as big as I could without flattening them out too much. They were also nearly burnt - and would have been ruined had I not checked them - 4 minutes in. The suggestion must not have been for a propane grill. Medium high was far too hot, and twenty minutes with only one flip was not accurate. I did, however, enjoy the flavor after the temp and time adjustments. Be sure to plan for small burgers unless you adjust the portion.

Anniversary Chicken I

Absolutely love it. Didn't have green onions or parsley, but was delicious without. Served with corn on the cob and red potatoes.

Baked Spaghetti

Reviewed: Mar. 8, 2014
I ended up making lasagna using this recipe because that's what I had on hand. It was delicious! Like other reviews suggested, I used ricotta cheese instead of cottage cheese and doubled the sauce.

Stuffed Cabbage Rolls

Reviewed: Dec. 18, 2013
Instead of using tomatoes, we simmered them in beef broth for 40 min and then fried them in butter.

Deep Fried Jalapeno Slices

Reviewed: Nov. 30, 2013
I thickened the batter with some corn meal. I needed more vegetable oil, about 1 quart total. I also used jar jalapenos and they worked great. Delicious.

Cheeseburger Meatloaf

Reviewed: Nov. 27, 2013
My husband liked this more than I did. I made it like a lasagna as suggested by another review, but after an hour it still was pink in the middle. I cut it in half, cranked up the temperature a little, and cooked it for about 15 more minutes. It was still pink in spots. I topped it with a ketchup and mustard glaze with pickles.

Slow Cooker Scalloped Potatoes with Ham

Reviewed: Oct. 21, 2013
Took longer than 4 hours to cook. I didn't see the instructions to layer until it was too late. Next time I'll use my large crock pot instead of my regular size one. I did substitute milk for water, cream of potato for cream of mushroom, and doubled the cheese.

Cheeseburger Soup I

Reviewed: Sep. 21, 2013
The soup could use more beef and less potatoes and celery. It should be more clear that the fourth step is done separately from the soup mixture.

Couldn't find the cayenne pepper, and it didn't need it. Spicy enough.

Buffalo Chicken Tacos-dup

Reviewed: Aug. 17, 2014
I used regular tortillas and left out the guacamole because we don't like it. I also added butter to the hot sauce to make it a buffalo sauce and saved it to add after the chicken was cooked because my 2 year old doesn't like hot foods. The supermarket didn't have any green bell pepper, red onion, celery, or cilantro, so I left those out. I substituted ranch for the blue cheese dressing. I used our Royal Prestige cookware to cook the chicken (no fat, no oil), then shredded it in my food processor, saved some aside for my child, then added the buffalo sauce to the shredded chicken, put it in tortillas with ranch, lettuce, and shredded colby jack cheese. Very yummy!

Crepes

Reviewed: Aug. 12, 2014
I made these and stuffed them with nutella and strawberries or bananas. They weren't sweet like pancakes (never had crepes before) or as easy to make, but I got the hang of it after using different sizes and types of pans (no crepe pan on hand), and adjusting the temp on my stove. They passed the kid test.

Quick and Easy Green Chile Chicken Enchilada Casserole

Reviewed: Aug. 5, 2014
Used flour tortillas instead, didn't char them, and didn't use the whole can of sauce. Shredded the chicken in a food processor, seasoned with garlic salt, red pepper, and cumin, and mixed the sour cream in with the chicken for easier spreading. I used Colby Jack and cheddar cheese because that's what I had on hand. It was still a little runny, but very good!
