Zucchini Bread

Nice basic recipe that can be tweaked. I used 1 cup of chopped walnuts instead of the choco chips. I also added 1 teaspoon of salt, which I was surprised is not in the recipe. A little salt boosts the flavor in any baking, I've found. 80 minutes seemed really long, so I checked it at 50 and it was almost done. I took it out at 60 and they were fine. Also, with any of these breads, I like to make them look prettier. While they're still hot from the oven, drizzle a light coating of confectioner's sugar glaze. To about 3/4 to 1 cup of confectioner's sugar, dribble a little water in just until you get a smooth glazing consistency and drizzle it on top of the loaves. If you have to, use the back of a spoon to get it to spread out over the loaves. When it all cools and the glaze dries, it just leaves a pretty and shiny top which looks nice.

Mom's Zucchini Bread

Wonderful bread to have around. Great flavor and not too sweet. Very moist, so don't wrap it too airtight, it may get kind of wet and soggy if you do. I froze two loaves in foil and that seemed to work very well. Last time I made the recipe, I gave a very light sprinkle of coarse turbinado sugar to the top of loaf before baking. Nice touch.

Gooey Butter Cake III

I love this and it's so easy. I do agree with other reviewers that using less sugar is better. 2½ to 3 cups of confectioner's sugar is plenty.

Glazed Lemon Bundt Cake

Delicious, especially eaten the day it's baked. The next day it lost a little quality, but I put it in the microwave and it revived nicely. Give each piece about 10 seconds in the micro, like you would a day-old doughnut.

Homemade Maple Syrup

I've always made a version of this maple syrup because my mother did this. You can get a lot of syrup out of one little bottle of maple flavoring. It keeps forever in the fridge and I just microwave what I'm going to use to take the chill off. Very economical.
