I'm a single mom, go to college full time, and work full time. Usually I spend one day a week cooking up a storm in the kitchen. I especially like to make things which I can freeze into individual or small group portions. This helps with my busy lifestyle if I can just grab something out of the freezer and have a nice dinner on short notice. I'm working on getting over my fear of modifying recipes. I'm really trying to concentrate on what each ingredient tastes like so I know what I am adding in to a recipe.
My favorite things to cook
I love to cook cajun food, but I prefer to do most things low calorie / low fat. I'm trying to eat healthier these days. I especially enjoy cooking anything new and interesting. You rarely will eat the same meal more than a couple of times in my home throughout the year. I just feel there are too many new dishes to experience.
My favorite family cooking traditions
My aunt makes chicken and dumplings and lets the kids make the dumplings. The kitchen is usually a mess after that, but they have so much fun!
My cooking triumphs
Recently I made a tiramisu which was to die for. I served it to my old boss (straight from Italy and owns a very nice restaurant). He said it was better than his! What an honor.
My cooking tragedies
Cooking blackened pork chops, I had too much spice for the size of the pork chops. When I put one in the cast iron skillet it reacted like gun powder, pepper in the air, you couldn't breathe, and the fire alarm was going off. LOL
