Easy Weeknight Tuna Pot Pie

Reviewed: Jan. 28, 2010
My husband and I both really enjoyed this recipe. I added 2 medium potatoes, diced, when cooking the onions because we had a couple potatoes to use up and it tasted great!

Quick Lemon Dijon Chicken

Reviewed: Apr. 16, 2010
My husband and I both really liked this. I used honey mustard instead of Dijon, but I otherwise followed the recipe. It was quick and easy to make, and was great with brown rice and broccoli.

Salsa Chicken Burrito Filling

Reviewed: May 2, 2010
This was delicious! The only change I made was I used 8 oz of tomato sauce because that was the smallest size can they had at the store, and I did add a little water because the sauce got a little thick. This probably helped cut down on the saltiness that some other reviewers noted.

Mouth-Watering Stuffed Mushrooms

Reviewed: Jul. 10, 2010
These tasted great! Everyone loved them! I brushed them with melted butter and sprinkled them with breadcrumbs as many other reviewers suggested. I used reduced fat cream cheese and the filling was still very rich and creamy. Also, I used more than 12 mushrooms because there was so much filling. I didn't count but I probably used about 24.

Sweet, Sticky and Spicy Chicken

Reviewed: Aug. 4, 2010
Awesome! We dredged the chicken and it was perfectly crispy. With low-sodium soy sauce, it makes something relatively healthy even more nutritious. I'm thinking of using red-pepper flakes instead of hotsauce to reduce the sodium even more. Definitely a re-make type of meal!

Zucchini Alfredo

Reviewed: Sep. 2, 2010
I added some mushrooms and green onions we had to use up, but otherwise I followed the recipe. I used skim milk and fat free cream cheese, and I still thought the sauce was creamy. Even my husband loved it, and he's not a big fan of vegetarian dishes!

Old-Fashioned Vegetable Soup

Reviewed: Sep. 16, 2010
It was a little salty for our taste, but otherwise we really liked it. Next time we make it I'll add less salt.

Clam Chowder Canadian Military Style

Reviewed: Oct. 4, 2010
Really great recipe, but it needs more flavor. I added some garlic powder, and I think next time I make it I will add some garlic with the onions and celery. I only used 2 cans of clams and I will add a third one next time I make it.

Spinach Lentil Soup

This was delicious! I followed most of the suggestions other reviewers made-I flipped the amounts of water and chicken stock, added brown rice with the lentils, and added garlic with the veggies.

I didn't have any frozen peas or any carrots, so I just used 1/2 cup of frozen mixed vegetables, but otherwise I followed the recipe exactly. It tasted great!

Tuna Lime Tostadas

Reviewed: Nov. 16, 2010
This is a good semi-homemade meal. Don't skimp on the salsa and lime juice. The fresher the ingredients the better. If you make your own salsa, it would kick it up a notch.

Roasted Garlic Cauliflower

Reviewed: Nov. 16, 2010
After the first 25 minutes make sure to get the parm sprinkled a little on each piece. Also, after broiling the cauliflower in the oven, transfer everything to a serving platter and drizzle the leftover oil over the veggies. You'll get the oil, cheese, garlic, and sweet juice from the cauliflower.

I used skim milk and omitted the sour cream, and it was still really thick and rich. I also added some rosemary.
