Made this for our Christmas dinner. It turned out perfectly. I garnished it with the Meringue Mushrooms (fount that recipe here). We used to buy it from the local French patisserie for $35. Won't have to do that again.

Quinoa Black Bean Burgers

Chicken and Spinach Alfredo Lasagna

So delicious! This is a huge hit at church potlucks. I did make a couple of changes to reduce calories and salt. I substituted half and half for the cream and used a low sodium cream of mushroom soup. Also, I used the whole 8 oz. package of mushrooms. Barilla makes a lasagna that doesn't require pre-boiling - it make this dish incredibly easy to make. Definitely cover the lasagna with aluminum foil (spray foil with cooking spray to prevent sticking) and remove it at the last 10 minutes.

Toasted Pumpkin Seeds

Finally! A recipe where the pumpkin seeds turned out perfectly. The only disappointment is that the pumpkin didn't have that many seeds. I actually used my toaster oven and only had to bake them for just under 30 minutes. This is definitely a keeper.
