This is an excellent change from regular burritos, enchiladas, tacos, ect. I followed the advice from other reviewers and spread the refried beans on the tortillas individually, keeping the meat in separate layers and adding taco seasoning mix to the meat. Also used two tortilla thickness to eliminate soggy torts...it was really good and the leftovers hold up well (which is great because I take them to work for lunch). I used more cheese than the original recipe called for, but this recipe is really adaptable...you can eliminate certain ingredients and add what you like to customize it. Topped off with shredded lettuce, chopped cilantro, sour cream and slices of avocado made this a delicious dinner~thanks for the recipe!
