Mama's Asian Chicken and Rice

Reviewed: Jan. 24, 2011
This was pretty good-I didn't have Chinese five-spice so I substituted cayenne pepper, otherwise stuck to the recipe as written. I found the sauce was rather runny even after adding the cornstarch/water mixture, but just turned up the heat and cooked another 10 minutes to evaporate excess liquid. In the future I will make the same sauce but prepare the chicken differently with a type of light coating and fry before mixing the chicken and sauce together. The flavor was quite good, just couldn't get the sauce to adhere to the chicken pieces like it would if there was a coating. Served with jasmine steamed rice and steamed snow peas.

Burrito Pie

Reviewed: Sep. 22, 2010
This is an excellent change from regular burritos, enchiladas, tacos, ect. I followed the advice from other reviewers and spread the refried beans on the tortillas individually, keeping the meat in separate layers and adding taco seasoning mix to the meat. Also used two tortilla thickness to eliminate soggy torts...it was really good and the leftovers hold up well (which is great because I take them to work for lunch). I used more cheese than the original recipe called for, but this recipe is really adaptable...you can eliminate certain ingredients and add what you like to customize it. Topped off with shredded lettuce, chopped cilantro, sour cream and slices of avocado made this a delicious dinner~thanks for the recipe!

Grilled Fish Tacos with Chipotle-Lime Dressing

Reviewed: Jul. 5, 2010
DELICIOUS!!! Thank you so much for sharing your recipe...I was sick and tired of restaurants advertising fish tacos and serving a deep-fried piece of fish and chips with a little cabbage and calling those the real deal. Being from So. California originally, I love fish tacos- this marinade and especially the dressing are fantastic! The only thing I did differently was cutting the fish in 2 to 3 inch cubes and grilling them in a foil boat over medium-high heat. I was worried the fish would fall through the grill and be wasted :) I used frozen talapia fillets I bought at Costco and it worked beautifully...thanks again for an excellent recipe!

Tantalizingly Tangy Meatloaf

Reviewed: Jul. 5, 2010
I followed the advice from another reviewer and used crushed pineapple instead of preserves, only because I didn't have pineapple preserves in the pantry. I also poked holes in it to allow the sauce to soak through, and wow! This is one great meatloaf! My 15 year-old son thought he hated meatloaf until he had this, and now I've had to double the recipe when I make it or else there's not enough for me :) Thank you for sharing a different and delicious variation on meatloaf!!

Bacon-Balsamic Deviled Eggs

Reviewed: Jul. 5, 2010
Made these for yesterday's 4th of July picnic and heard nothing but complaints which I think were justified. I managed to eat two halves, but the bacon turned too chewy in the mayo and the deviled eggs filling itself was way too sweet. I thought it seemed strange putting sugar with balsamic vinegar and it didn't get any better with refrigeration. I'm sorry but I didn't like these at all and was disappointed that I hadn't stuck with the traditional recipe with mayo, mustard and egg yolks. My husband and kids all disliked them.

Chicken Florentine Casserole

Reviewed: Mar. 26, 2010
Absolutely delicious!! Doing as other reviewers suggested, skipped baking the chicken, sauteed spinach and mushrooms in butter, then layered spinach, mushrooms, half the sauce, uncooked chicken breasts and poured remaining sauce on top-baked at 350 for 30 minutes, topped with a lot of mozzarella and continued to bake for another 20 minutes ( I used pretty thick chicken breasts). I also substituted 1/2 cup milk for the half and half, based on other reviewers stating it was too rich with the half and half. This is the best recipe I've tried from allrecipes and I am so glad I did!!! This is going to be on my regular rotation at least every two weeks...thank you so much for sharing!!

Slow Cooker Spare Ribs

Reviewed: Feb. 3, 2010
I did not care for this sauce at all-I had my doubts based on several reviews that there wasn't enough flavor, but figured I'd try it since I had some ribs on hand and it seemed simple. I put them in the crockpot and followed the ingredients exactly and they came out tasting bland. After pouring Sweet Baby Ray's over the top and baking for another 10 minutes, they were somewhat more palatable but not worth wasting good ribs. Sorry, just didn't care for this at all.

Caramelized Baked Chicken

Reviewed: Feb. 3, 2010
Very good sauce, although I took another reviewer's suggestion to modify the catsup ,honey and garlic measurements for boneless, skinless chicken breasts and boil the sauce to caramelize before baking. My picky 15 year-old son said they were really good, and he and his father both requested having chicken wings this Superbowl Sunday with the same sauce. I'll definitely be making this chicken on a regular basis...I served it with Jasmine rice and had no leftovers! Thanks for a great recipe!!! :)

Boilermaker Tailgate Chili

Reviewed: Jan. 22, 2010
This was the first recipe I tried from this website and absolutely loved it!!! I made a few changes-I drain all the cans of beans, substituted half of the ground beef with cubed chuck steak that I browned first and took the easy way out using canned chopped green chilis and added canned diced jalapenos ( I like spicy chili). I used a dark beer ( Guinness one time, Sierra Nevada the next) and after cooking it according to the directions, I put it in the crockpot on low for 3-4 hours to tenderize the cubed chuck steak and allow the flavors to blend. I have been invited to three Superbowl parties this year on the condition I bring this chili!!! The best chili recipe EVER!!!!! I wasn't a Purdue fan but I am now!! :)

Slow Cooker Adobo Chicken

Reviewed: Jan. 22, 2010
The picture looked appetizing enough so I thought I'd give it a try...I couldn't eat it. The vinegar and soy sauce was overwhelming, and the onion was an odd addition that simply didn't work. I will keep searching for a good slow-cooker chicken recipe because this wasn't it.
