Cream Puffs

Real Homemade Tamales

When making tamales, the corn husks need to be in HOT WATER! And you need to use the SMOOTH side of the husks. Prevents dough sticking to husks when cooked.

Apple Crisp II

This is delicious!!! Next time, though, I will use less sugar on apples and I left out the water. I baked on 8x8 stoneware. I did use only 7 apples and 1/2 of sugar for the apples. I did however use the full amount of topping ingredients. I highly recommend this recipe. It's only the two of us. It's almost gone!! This recipe is a keeper.

Janet's Rich Banana Bread

Fantastic recipe. I used 1 cup of mashed bananas and added the lemon juice to it. I did use 1 tsp. baking powder and 1 tsp. of baking soda; and used 1 3/4 cups of flour total. I placed all dry ingredients together and mixed well. In another pan, I melted the butter and when lukewarm; added the 2 eggs and mixed well and added the sour cream and mixed well, then added to flour mixture, (folded in). Placed in 9x5 pan sprayed with baking Pam spray. I did have to leave in oven for an additional 15 minutes. Last 20 minutes covered loaf pan with a tented foil to prevent darker top of loaf. After 10 minutes, placed on wire rack to cool. Delicious recipe. Thanks for sharing recipe. My go to recipe from now on.

Corned Beef and Cabbage I

I electric pressured cooked mine for 45 minutes. I did however used only 1 1/2 cups of water with corned beef spices (Packet it came with)and used the liquid corned beef came with. After cooked and let steam out carefully, did add the veggies and pressured cooked for 3 min. The corned beef came out tender and delicious, but I think next time will cook veggies separately with the corned beef broth on top of stove. The veggies were overcooked, I did use an onion also. None the less, still delicious. First time I cooked in electric pressure cooker. Went back to store and bought 4 more packages of corned beef and put in freezer for future use. This was so easy and delicious.

Mexican Rice II

I used 2 Tbsp. of veg. oil instead of 3 Tbsp. Also use 1 tsp. of ground cumin, 2 tsp. ground garlic, and added 1/4 cup water. Came out perfect. Sometimes I add fresh garlic (minced and add last when sauteing). Don't want garlic to burn. If using chicken granules, I don't use salt. Thank you for sharing this recipe. You may also add 1/2 cup of frozen peas and carrots the last few minutes for a change. You may also add some chickpeas, from a can, rinsed. Many options to your likes. immediately lower heat to simmer. COVER WITH LID. Just 20 minutes. Delicious. Sometimes, I add chicken thighs when about to add the chicken broth or water. It comes out delicious!!! So many options. When I don't have chicken broth I use Knorr chicken granules to water. ENJOY!!!

Conchas (Mexican Sweet Bread)

MELISSA* Is there any way you can have the recipe for BISCOCHITOS??? They are cinnamon and sugar cookies. If so PLEASE POST. Thank you. I warmed water and milk together in glass measuring cup for about 15-20 seconds in microwave. 115 degrees, then placed in bread pan machine with softened butter. Just made dough in bread machine. Took 1 hour 20 minutes. Took out and kneaded a few times, then divided into 12 pieces, The topping was mixed by handmixer and was crumbly. Put together and made a long rope, then divided. For each topping, I pressed sugar dough onto cutting board and flatten with palm and then sliced a shell pattern with sharp knife, then placed on dough. Rested for 45 min. Baked for 20 minutes. (Next time for 14 minutes). I used vanilla extract for the topping. Shared with neighbors, and they loved them. Hubby really liked them too. Thank you for sharing a great and fantastic recipe. For those who have problems with the dough or topping, use real butter. Make sure water and milk are 115 degrees. This is the difference in results. ***UPDATE****Made again only using 3 cups of all-purpose flour with 1 cup 100% whole wheat with the addition of 1 Tbsp. of Wheat Gluten. Baked for 14 minutes and perfect timing. Came out light and airy. I did make smaller conchas. About 2 dozen. These came out lighter and airy than with all-purpose flour. Either way, both ways came out delicious and fantastic. This is a KEEPER RECIPE.

Bread Pudding II

Highly recommend this recipe.UPDATE***Made this evening with what I had. French bread cut in small pieces, used 1 cup 1/2 & 1/2, 1 cup evaporated canned milk, 4 eggs,2 tsp. vanilla extract and SPLENDA BROWN SUGAR (3/4 CUP) AND extra cinnamon. ( did egg whites in mixer til triple, then I added egg yolks, sugar, all milk including 1/2 & 1/2 I did drizzle about 4 TBSP. melted butter on top of bread mixture and a small amount of 1/2 &1/2 also on top of bread mixture in pan before baking. DELICIOUS. SO happy with this bread pudding. Thanks for sharing.

Uncooked Banana Pudding

This recipe will be used often!!! I made earlier in the day. Delicious. I added 1/2 pkg. of regular (8 oz.) cream cheese to milk mixture first in kitchen aid mixer for about 3 minutes to blend in well, then added other ingredients. With banana slices, put them in a little water with lemon juice to keep them from browning. Awesome recipe!!! Thanks for sharing.

Sweet Dinner Rolls

I made in my Breadman Bread machine for the dough. I used bread machine yeast. 2 1/4 tsp. Took 1 hr. and 20 minutes in machine. Took out dough and split in half. Rolled out and spread softened butter and cut in 8ths. I let them rise until doubled. Took about 13-15 minutes to bake. Oh my gosh, these are delicious. These are light and perfect!!! These are the perfect size! Favorite recipe. Thank you for sharing a wonderful and great recipe.

Big Soft Ginger Cookies

Made this yesterday and they were delicious! Thank you for sharing this great recipe! I made 36 med. cookies. Perfect size. Used a small cookie scoop, so they all came out the same size. Got great reviews. Next time I will add more spices. personal preference.

Simple Scones

You don't have to use frozen butter. I used straight from fridge and cut into small cubes and added with all dry ingredients in mixer until crumbly. Then added wet ingredients, mixed well, then added a handful of dried cranberries, mixed well. This time did not top with sugar. Have made in food processor and standup mixer. I prefer the standup mixer because food processor dices the dried craisins too much. UPDATE*****4/29/12***Made yesterday and today, using KitchenAid standup mixer and prefer standup mixer. Came out perfect. You must try this recipe. Also, I add 1 TBSP. orange extract. I like my scones to be extra fragrant. Give this recipe a try.
