About this Cook
I never thought I would be the cook in the house, but family circumstances being what they were, I stepped up to the range almost 40 years ago. Been doing it since. I'm probably better than intermediate, but I just can't call myself an expert, unless you want to know what NOT to do!
My favorite things to cook
Chicken Big Mamou on Pasta, lasagne, ribs, some vegetarian. Pretty eclectic. I like to try ethnic cooking, too, but am not adamant about it being totally accurate. It's cooking, not brain surgery.
My favorite family cooking traditions
I must have learned from my mother by osmosis, since I could never have cooked with her in the kitchen. I guess the genes are there. I like to cook for family, and both our children are good cooks.
My cooking triumphs
Any dish that people enjoy. I like it when my wife says "This is a 'make-again!'"
My cooking tragedies
Macaroni and baked bean casserole. You don't want to know. Tapioca sans sugar. I was so embarrassed!

Pineapple Carrot Salad
I made it! Since my other dish was picadillo, which has raisins also, I cut up a Red Delicious apple and added that instead. I wound up using banana creme yogurt since I could not find either pineapple nor vanilla yogurt - go figure. I also julienned the carrots in my food processor. The salad was well-received.

Orzo with Mushrooms and Walnuts
Now this was fun, and if there were a way to do 4 1/2 stars, that's what I'd give it. It does make a lot, but was well-received. Next time I make it, I think I will add some lemon zest. This would best be served with a spicy, full-flavored meat or other entree, since there is no one flavor that stands out in it.

Arugula, Fennel, and Orange Salad
I decided I had to make a salad with fennel for some friends. I don't know; I just felt like using fennel. I found this recipe. I had never used fennel before, nor arugula....and black olives with oranges? Well, it works! The salad was delicious, everybody loved it, and I had no leftovers! Suggestioin: cut the fennel bulb into small-to-medium pieces.
