Greek Pasta Salad III

Very good base recipe. I read some of the other reviews and followed what they did. I made this for a corporate luncheon for 40 people. I substituted a few things. I used cheese tortelini, red onions instead of green onions, added some green peppers and reduced the amount of mushrooms and used pitted kalamata olives instead of canned black olives. It got rave reviews. People were scooping it into paper cups to take home. Definitely one to make again and try more variations.

Goat Cheese and Arugula over Penne

Very easy recipe. My husband loved it. He ate the leftovers the next day cold for lunch and loved it that way too. I used regular tomatoes since that is what I had on hand. I also added a little buffalo mozzarella to it as well. All of the fresh ingredients that I used came from a farmer's market and were in season. The goat cheese was locally made too. So it had a really good fresh taste. Great summer recipe but I probably won't make it when those ingredients are out of season.

Easy Pork and Sauerkraut

I don't know what happened but it turned out awful. I couldn't eat it. I am originally from PA dutch country so I know how it usually tastes. This wasn't it.

Lemon Garlic Tilapia

Nice Flavor. I cooked it in a hotter oven and for a shorter time. I didn't have fresh lemons so I substitued lemon juice form a bottle and it still came out good.

Stuffed Mushrooms II

My mushrooms turned out great but I followed the advice of others. I reduced the amount of breads crumbs by half and increased the cheese. I also put my stems into a food processor and chopped them finely. Then I let the stuffing chill in a bag in the fridge before using the bag to pipe into my mushrooms.

Mussels Marinara di Amore

Good stuff. I make it a little hotter by adding hot sauce and crushed red pepper. When the store is out of mussels, I have substituted little neck clams.

Fantastic Black Bean Chili

This is a good chili recipe. I spiced it up by adding a little cyenne pepper and cumin. I have also made this where I use a variety of beans. I always get great comments on it.

Baked Sweet Potatoes with Ginger and Honey

My husband doesn't like Sweet Potatoes but he loves this recipe. I tripled this recipe for a family gathering and the potatoes were gone with in fifteen minutes. They are still raving about them. Cardamon makes anything great. Oh! I ran out of honey and substituted brown sugar and it still worked.

Apple Stuffed Chicken Breast

My family enjoyed thid recipe. There is plenty of room for adaption. I didn't quite have all of the listed ingredients. I improvised and used blue cheese and chopped walnuts in the stuffing in place of the cheddar cheese. It was a hit.
