Fried Mozzarella Cheese Sticks

Reviewed: Oct. 17, 2010
Very tasty and the cheese stayed in the fried portion. I froze the cheese and then cooked for 45 seconds in a deep fryer. This was my 4th attempt with our deep fryer and the first dish that has come out the way I wanted it to.

Spinach Feta Pizza

Reviewed: Jan. 15, 2011
I briefly sauteed the mushrooms in garlic and olive oil. I used two cloves of garlic and my husband complained it was too garlicy. I didn't add the additional garlic and garlic salt to the pizza, just what was in the mushroom mix. I also didn't measure any of the toppings. I used a thin crust boboli. I thought it was delicious.

Grandmother's Buttermilk Cornbread

Reviewed: Nov. 19, 2010
Excellent! I made exactly as written, with the advice given in the comments to mix everything in the same pan that I melted the butter. I baked for 20 minutes and it was done. I may try 19 next time, as the edges were a little crisp. My 2 and 4 year old loved it and so did my husband. It is rare to find anything that everyone in the family enjoys!

Cinnamon Rolls III

Reviewed: Nov. 19, 2010
Soooo good! I didn't make with a bread machine, I kneaded by hand. I also don't like nuts in my cinnamon rolls, but otherwise I followed the recipe exactly. I baked for 17 minutes and the insides were a little bit doughy (although some people mentioned that they liked them doughy). Next time I will try baking for 18 minutes and see what happens

Honey Glazed Pork Tenderloin

Reviewed: Nov. 19, 2010
Excellent. Will make again. I used olive oil instead of sesame, added a clove of garlic, and made extra sauce to use as a dipping sauce. I forgot to lower the oven temp to 350 and the extra sauce in the pan burned to a crisp, but the pork still tasted good....i didn't realize until the smoke alarm went off after 30 minutes. It is a good thing it went off, or the pork would have been overcooked

Oven Fried Parmesan Chicken

Reviewed: Oct. 3, 2010
I love this recipe, the garlic butter makes it much better than the standard breaded chicken that my mom has made for years. It may be more fattening, but it is nice for a treat every once in awhile. It is quick and easy to prepare and even my picky 4 year old ate it. I use the thin sliced chicken breasts and bake for 40 minutes

Pecan Rice

Reviewed: Sep. 27, 2010
This was an excellent dish. I was trying to find a different way to make rice for my kids (2 and 4). They thought it was "yucky" even though they barely tried it, but my husband and I loved it. I will try it again with the kids.

Peppered Shrimp Alfredo

Reviewed: Aug. 26, 2010
This is one of our favorite dinners. I usually use chicken instead of shrimp. Also, if I have time, I make my own Alfredo sauce using another recipe from this site. Other than that, I follow the recipe and we have an excellent meal.

Broiled Tilapia Parmesan

Reviewed: Sep. 16, 2010
Delicious. I used light mayo. Also, I didn't have any basil so I used some italian seasoning and I used regular salt instead of celery salt. My husband loved it, and he is not usually a fan of fish night

Hot Artichoke and Spinach Dip II

I used sour cream instead of mayo, a little extra spinach and a little less artichokes, and mixed the mozzarella cheese into the mixture

Mashed Sweet Potatoes

Reviewed: Nov. 19, 2010
I could eat the whole 6 servings! I didn't add as much milk b/c it would have been too runny. I add the butter first, then the syrup, and add milk until it is the right consistency.

Butternut Squash Casserole

Reviewed: Jan. 15, 2011
This tasted more like a dessert than a side dish! I didn't even use the topping, it was good enough as is. I also used about 3/4 cup of sugar, it was definitely sweet enough.

Light and Fluffy Spinach Quiche

Reviewed: Nov. 8, 2010
I followed the advice of other reviewers and added 2 cloves of garlic, 1 extra egg, sauteed the onion and spinach first, used yogurt instead of mayo, and added some feta. Excellent.

Burrito Pie

Reviewed: Feb. 22, 2011
Excellent Recipe. I only made the half the recipe because I only had 1 pound of ground beef, but next time I will probably make the whole recipe and freeze a pie. I left out the tomatoes and added taco seasoning to the ground beef. I also, as suggested, spread the refried beans along the bottom of the tortillas. I was also out of olives, but will add next time.

Boilermaker Tailgate Chili

Reviewed: Nov. 19, 2010
Changes - my husband didn't want it too spicy - only 3 cans of beans, no celery, 2 T chili powder, no hot sauce, 1/2 t cayenne, used 3 pieces of chopped bacon. I put 3/4 c of beer, but next time I would do 1/2 c because the chili was overall a little soupy. It could be because I used the food processor to chop the onions and peppers and that turned out a little watery.

Grilled Shrimp Scampi

Reviewed: Sep. 27, 2010
Excellent dish. Our grill was out of gas, so I broiled the fish after marinating for a few hours. I forgot to add the red pepper, but that probably would have made it even better. I also added 1/4 c of parmesan cheese, as suggested by others.

Mom's Zucchini Bread

Reviewed: Aug. 26, 2010
Excellent and easy enough to make for a beginner. My picky 4 year old told me it was "absolutely delicious". I had to increase the baking time to about 80 minutes, but the bread was still very moist. Next time I will try some of the variations to make it a little healthier.
