Double Tomato Bruschetta
my guests inhaled this and kept asking how it was made! I garnished with extra piece of basil on top and it looked super fancy. Also use the plum tomatoes as suggested b/c they have less water. I didn't do this and had a lot of liquid but it still was ok.

Gourmet Mushroom Risotto
First time ever making risotto and it was yummy and a hit. I had never even had risotto before this...but I love it now.

Champagne Shrimp and Pasta
Delish! We loved it! I didn't have champagne and I made it with white cooking wine instead, and it still came out great!
