Spicy Peach Pork Tenderloin

I made this for my family last night for dinner. I followed the directions as is, except (1) this New Mexico gal did not have any chipotle chiles in adobo sauce! I used 1 TBS of ground dried chipotle instead. And (2) I marinated the tenderloin in the honey sauce for 3 hours before baking it. I thought the sauce was intriguing and was anxious for it to really flavor the entire roast. It did and it was delicious! As stated in the recipe, this roast was very tender and very flavorful. I used one fresh peach, sliced, but next time will use two, as the peaches added such a nice flavor. My family loved this dish. It will be one of my two go-to pork tenderloin recipes from now on. Next time I will add that second peach and again marinate the roast for at least 3 hours. I'm also going to try sprinkling chopped fresh cilantro over the finished roast, as it goes well with our red and green chiles.

Cheezy Potatoes

I've been making this recipe for over twenty years now and it's always a huge hit at parties, potlucks, etc. In fact, once I brought it to my then work's first potluck, I was told that I could never bring anything but this dish ever again (LOL). My recipe does call for a few different ingredients, though: cream of chicken instead of cream of potato soup and crushed Kellogg's corn flake cereal instead of the potato chips, but I'm sure the taste is equally delicious either way..

Weeknight Skillet Fajitas

We loved this quick and easy fajita recipe. I did marinate the chicken for an hour in a mix of the juice from 2 limes, 2 tablespoons of fresh chopped cilantro, a tablespoon canola oil and a couple dashes of hot sauce. When it came time to sauté the chicken, I added the marinade to the skillet along with the chicken. The added flavor of the cilantro and lime made this dish right on par with the fajitas we get in our local restaurants here in New Mexico. Using the prepackaged onions and bell pepper strips made this recipe so much easier. Instead of Birdseye, though, I used Trader Joe's Fire-roasted Onions & Bell Pepper Strips, as I shop there weekly and it was more convenient. The results were delicious! This is now my go-to recipe the entire family loves. Muchas gracias!

Real Chiles Rellenos

I tried this recipe when I was out of the red chile powder I needed to make my favorite red chile sauce for rellenos. I've been making homemade Chile Rellenos for over 30 years now and make the batter for the rellenos pretty much the same way as this recipe. It takes a bit of work but the results are delicious and not the least bit heavy or greasy . I tried the sauce recipe here but in my opinion, it was too tomato-y and did not work well with the relleno. Out here in New Mexico we (strongly) favor a sauce made from pureed red chiles, using no tomatoes, cinnamon, etc. for our rellenos. So, for the battered chiles, I give this 5 stars. I give the sauce 2 stars.

Rustic Tuscan Soup with Kale

I've just finished making this for supper tonight. I came here looking for a recipe for fresh kale and ham, and so I substituted 1/2" cubes of leftover ham for the bacon. I used 1 tablespoon of garlic-flavored EVOO instead of the bacon drippings to saute the onion in. I decided to use some of my homemade polenta that I had frozen instead of the French bread croutons. After partially thawing it, I cut it into 3"x3"x1" squares and briefly crisped them up a bit in an lightly oiled, hot skillet. When serving the soup, I added one hot polenta square to the center of each semi-filled bowl of soups and garnished each with the reserved chopped kale and grated Parmesan cheese. The result was a rich, delicious main dish soup that was as healthful as it was easy to prepare. I served it with a loaf of crusty Italian bread from the local deli and a great bottle of wine.

Mom's Favorite Baked Mac and Cheese

I had high hopes for finding my ideal Mac & Cheese but,sadly, this did not turn out to be it. My ideal is very creamy with a nice tang from added mustard and/or sharp cheddar cheese, and with no added meat or veggies. I doubled this recipe and did substitute Velveeta for the packaged American cheese. The cheddar I used was a good quality Sharp Cheddar. Before spooning into the pan to bake I tasted it and found it needing more mustard (for my taste). I stirred in an additional 1/4 teaspoon of dry mustard and baked as directed. I did not over-bake this. I found the resulting casserole to be on the dry, pasty side and still needing more oomph . . . from more mustard and or more cheddar. I concede that our college freshman daughter and her six friends seemed to like it well enough, though. As for myself, I'm back on the hunt for a richer, creamier version. I'm sure this is just a personal preference problem on my part, and not a faulty recipe.

Cranberry Swirl Coffee Cake

This coffee cake is pure heaven and brought rave reviews from everyone who ate it. I used my own homemade cranberry sauce which has whole cranberries, orange juice, sugar and orange peel. I also added the recommended streusel topping. I could eat this once a week for the rest of my life! Thank you!!!

Peach Coffee Cake II

This was a fairly easy recipe to make and quite tasty. I doubled the topping as many here have suggested. The topping was very good in itself, but I feel that it overwhelmed the peach flavor. I was looking for a recipe that really showcases fresh peaches. I'm wondering if adding lemon juice and sugar to the cut peaches might help enhance the taste, especially if they're not highly flavorful? Next time I'm going to put the fresh sliced peaches on top before baking, use more peaches and perhaps use a sour cream glaze of some sort after it's out of the oven instead of the pecan topping.

Just out of curiosity I used 2/3 teaspoon pure vanilla extract and 1/3 teaspoon almond extract. Heavenly, although I can tell that it would be equally great using all vanilla.

Simple Apple Dumplings

I wanted so much to like this recipe. The basics seemed very good as well as being a quick, easy recipe. Reading through many of the reviews I decided like a number of people here to cut the sugar and butter in half, but kept the oj the same amount. Other than that, I followed the directions exactly. The resulting dumplings came out with the tops browned nicely. But upon serving it to my family, we found the apples to be quite crisp and undercooked, while the and the undersides of every dumpling was very uncooked: soft, doughy, and rubbery. My oven is pretty new and cooks everything (else) with out problems, so I'm curious as to what happened. And yes I did check the oven temp and the orange juice sauce was boiling when I poured it over the dumplings before baking. As for the sauce, it was still too sweet for me. I don't think it I'd make again.

Spicy Oven Fried Chicken

A tasty dish but I won't make it again. I think that I might have enjoyed it more without the hot spices. Don't get me wrong, I'm from New Mexico and we love spicy foods, but I feel the minimal heat somehow cancelled out the flavor of all the other spices. The chicken was very tender and moist. I used a good quality Ranch dressing, as no buttermilk was available the day I wanted to make it. The calories and fat from the doing it this way were not worth it in my opinion. I don't doubt that it is a great dish for many people, but I'm going to look elsewhere for a similar dish that doesn't require any frying at all, and that uses panko bread crumbs, buttermilk and a mix of regular spices.

Pear and Prosciutto Bruschetta

I was charged with bringing the appetizers to a large dinner recently. These appetizers were the hit of the party! Everyone raved about them and they were gone within 5 minutes. The flavor combination of the pear, blue cheese and prosciutto is amazing!
