I am a firm believer in making a warm, healthful, delicious sit-down breakfast for my family . . . every day. I've been doing that my entire married life. Balancing delicious and kid-friendly with healthful has been my biggest challenge!
My cooking triumphs
I make the world's best Winter Spice Molten Lava Cakes with Rum-Ginger ice cream. I got the recipe many years ago from Bon Appetit magazine. It looks and sounds complicated, but is really easy. I always get raves when serving it.

Spicy Peach Pork Tenderloin
I made this for my family last night for dinner. I followed the directions as is, except (1) this New Mexico gal did not have any chipotle chiles in adobo sauce! I used 1 TBS of ground dried chipotle instead. And (2) I marinated the tenderloin in the honey sauce for 3 hours before baking it. I thought the sauce was intriguing and was anxious for it to really flavor the entire roast. It did and it was delicious! As stated in the recipe, this roast was very tender and very flavorful. I used one fresh peach, sliced, but next time will use two, as the peaches added such a nice flavor. My family loved this dish. It will be one of my two go-to pork tenderloin recipes from now on. Next time I will add that second peach and again marinate the roast for at least 3 hours. I'm also going to try sprinkling chopped fresh cilantro over the finished roast, as it goes well with our red and green chiles.

Cheezy Potatoes
I've been making this recipe for over twenty years now and it's always a huge hit at parties, potlucks, etc. In fact, once I brought it to my then work's first potluck, I was told that I could never bring anything but this dish ever again (LOL). My recipe does call for a few different ingredients, though: cream of chicken instead of cream of potato soup and crushed Kellogg's corn flake cereal instead of the potato chips, but I'm sure the taste is equally delicious either way..

Weeknight Skillet Fajitas
We loved this quick and easy fajita recipe. I did marinate the chicken for an hour in a mix of the juice from 2 limes, 2 tablespoons of fresh chopped cilantro, a tablespoon canola oil and a couple dashes of hot sauce. When it came time to sauté the chicken, I added the marinade to the skillet along with the chicken. The added flavor of the cilantro and lime made this dish right on par with the fajitas we get in our local restaurants here in New Mexico. Using the prepackaged onions and bell pepper strips made this recipe so much easier. Instead of Birdseye, though, I used Trader Joe's Fire-roasted Onions & Bell Pepper Strips, as I shop there weekly and it was more convenient. The results were delicious! This is now my go-to recipe the entire family loves. Muchas gracias!
