Chicken Tagine

My husband and I LOVE this recipe. I make it with chicken breasts as we don't like dark meat, but otherwise exactly as written. If you like that slightly sweet, fruity main dish with the Mediterranean spiciness unusual to the Western palate, you will love it! So easy too-put it in the crockpot before work and when you get home you can make the couscous in 5 minutes. This and a glass of milk is all you need for a healthy filling supper. Keeps great in refrigerator or freezer for leftovers. For some other perspectives, my college daughter said it was "OK" and my 8 year old granddaughter said "good" (and ate her whole bowlful).

Mom's Baked Egg Muffins

I really liked this, and found it is very versatile, as mentioned in many of the reviews. I plan to add this to my collection of recipes to eat out of hand in the car on the way to early morning triathlon training.

Jack-O-Lantern Pumpkin Pancakes

"Mommy, will you make Pumpkin Pancakes like Grammies? Cuz they are sooo delicious" my 5 year old grandson said to his mother. What better recommendation could you have than that? We all love this and it has become a staple. The batter as written is very thick so I use 1 and 1/2 cups milk, and they cook up fine. It is important to let the batter sit for about 15 minutes to soften the oatmeal (as other reviewers have noted). I also use all whole wheat flour and increase the cinnamon to 1/2 teaspoon. I love them with sliced banana and warm applesauce, they are really good plain too. I have never used the chocolate chips. I lighten them up by using Egg Beaters for the egg and substituting applesauce for half of the oil. It works fine to make up the batter the evening before.

Eggplant Lasagna

Amazingly delicious! We all loved it. I made it just as written but used Prego Light Smart Spaghetti sauce. Very flavorful, you cannot even tell there is eggplant in it.
