Fluffy Pancakes

My youngest says 100 stars! These were easy to make and wonderful to eat! I doubled the recipe and then halved the butter because it was all I had. We will certainly be making these again!

Chicken and Corn Chili

The whole family ate it! That in itself is amazing. Mine was not soupy like in the picture. It was much thicker. The hubby and I ate it in tortillas and the kids ate it out of bowls. I will make this again. Especially since it was SOOOO easy. Oh, I did do it all at once, not overnight.

Taco Seasoning I

It was a bit spicy for my family so I leave out the red pepper flakes. Per other readers, I also added a teaspoon of corn starch to make it all stick. YUM! I love that I no longer have to use the packets that list MSG as the first ingredient! Thanks a ton!

Easy Slow Cooker French Dip

This was a HUGE hit at our house. I used the sirloin tip and a Guiness beer. I also added a bit of garlic and worcestershire sauce. I topped it with Provelone cheese then popped it under the broiler for a few minutes. YUM! I think I might add a sliced onion next time to see how that works.

Seared Salmon with Balsamic Sauce

This was a wonderful dish! It was our first attempt at making salmon. The only thing I changed was we grilled the Salmon. I served it over a bed of greens. Not only did it look beautiful but the sauce made a great warm dressing on the salad. The ultimate complement must be that both my boys (8 and 5) cleaned their plates!!

Mother's Ham Casserole

My family LOVED this recipe! Even my picky eater cleared his plate and asked me to make this again tomorrow! The only change I made was to double the onion. I will defiantly make again....just not tomorrow!

Greek Lentil Soup (Fakes)

This soup is wonderful and easy. I have made it several times now. Even my kids eat it. Last night I tossed in some shredded chicken....not a good idea! We all agreed I should have just left it the regular way.

Black Beans and Rice

I followed others advise and doubled the cumin (love cumin) and then added the tomatoes and corn. I also added some organic sausage that I had in the freezer. YUM! I'm sure I will be making this again!

Oven Baked Potato Wedges

I added the 1/3 of a ranch packet to the breadcrumbs as suggested by another reviewer and the family devours them. I also use red potatoes because that is what I usually get in my veggie co-op box. I have made this several times now. YUM

Hearty Lentil Soup II

Behold a miracle! My children ate vegetables without even a murmur of a fuss or whine. In fact, they devoured it. I used a Merlot for the wine (a bit more then called for too) and I used fresh tomatoes that I diced myself. Thank you for this very yummy recipe!
