Fish in Foil

So simple and delish!!! I love the fact that you don't actually have to marinate the chicken I had of time the flavors just meld together while you are baking! I added fresh basil red onions and zucchini to my packets and it turned out amazing!!

Sugar Cookie Icing

Great recipe! Wwhat makes the cookies so gorgeous is the lovely sheen that comes out of the corn syrup! Tips: 1) I would say though that the measurements are key-too little milk and it is way too sticky, too much milk, and the icing falls off the sides of the cookie. 2)If you are putting any sort of sprinkles or decorations, put them on immediately after icing each cookie, not after icing all of them; the dry time is super fast. Not sure where they came up with 6 hours, becuase they dried in under 10 mins and then it became difficult to put sprinkes on top. 3) I was not a fan of the almond extract. I tried vanilla extract on 1/2 the batch, that was great, or try lemon, like some others suggested. Overall, great recipe, very professional looking and easy!

Chocolate Chip Banana Bread II

I saw all the rave reviews and just had to try this...let me tell you, I made a lot of subsitutions and still-EVERYONE raved about this bread and said it was the most delicious, moistest banana bread they have ever eaten! So let me tell you the substitutions: - Used "Land O'Lakes spreadable butter with canola oil" in place of shortening - Used egg whites , no yolks - Used 2 tablespoons sour cream instead of mayonnaise (this is the secret moistening ingredient!) - This recipe didn't call for it, but most banana bread calls for vanilla extract, but I didn't have it and it was 11pm, so I used 100% maple syrup (2 teaspoons) instead - Didn't put nuts in TRUST the people who have reviewed this recipe....this recipe is a keeper! I will not use any other recipe for banana bread again!

The Best Thai Peanut Sauce

An AMAZING recipe - I was skeptical at first, but this "no-cook" recipe lured me in and it was so worth it! I actually had several modifications though. I had a smaller group (3) for dinner, so i used 1/2 cup PB, 1/4 cup coconut mil,, no fish sauce, because I didnt' have it, no hot sauce because I don't handle heat well, and I did add rice vinegar, 3TB, and some crushed peanuts. The rice vinegar and lime really give it that sour kick, while the coconut adds the sweet balance. I poured this over 2 dishes I made - one was a chicken dish with red peppers, the other veggies with tofu. I got many compliments from my dinner party and husband and I really can't believe how simple it was! Took me no time. A definite crowd pleaser!
