Green Bean and Potato Salad

Good way to get a potato salad without the chance of getting sick from it sitting out for long. It has good flavour and definitely needs to sit overnight for the flavours to blend. The only change was to add a little extra garlic. I gave it only four stars because I did find one better potato salad recipe here, but this one still is nice.

Gramma Bertha's Banana Cake

Banana cake? You mean 3 tonne cake; WOW was this dense. Taste is great and luckily I read other reviews before making it so I expected something heavy. Not sure if it will be made again or not. Maybe this will improve after it has aged.

Craving Cookies

Not crazy about these......would make banana bread to get the same effect and it would taste better. I still give it three stars since I didn't put the chips in it but used cocoa powder instead. Next time my over-ripe bananas will be used for something else......not that thet tasted bad just not worth the time

Wow this is different. It is tangy yet VERY sweet. Who knew my three year old would eat an entire piece. Gorgeous looking pie that would offset any holiday table.

Pumpkin Chocolate Chip Muffins

Made these for my husband as I am not a pumpkin fan. They actually aren't bad. I tripled the recipe as I make my own canned pumpkin and had 3 cups worth and used it all. I substituted 2c brown sugar for white (didn't have any) 2 tsp cinnamon, 1 tsp each clove and nutmeg as we both like a lot of spice. Half I made with chocolate chips and other half without. Good both ways for those calorie counters. Filled muffins tins to top and it made 23 muffins.

Roasted Veggies with Couscous

I used this as a base and made many changes. The reviews stated this as bland so I tried to add flavour in many ways. I added 5 cloves of garlic, snow peas, onion, and the red pepper. It was stir fried in a mix of olive oil, butter and sesame oil. After it was cooked I added twice the amount of balsamic vinegar. The couscous was cooked in beef broth . The veggies had a lot of flavour but the couscous itself was still bland.

Broiled Tilapia Parmesan

This is great. The only trouble I had was keeping the mix on the fish. As the butter melts it tends to slide off on to the pan. It may have been the pieces I was using but I don't think so. I may try just heating it up in a pan and drizzling over when served next time.

Jo Jo's Favorite Banana Muffins

Great recipe with a few changes. I substituted half the flour for seven grain, olive oil for the margarine, and cut out 25% of the sugar. The bananas were thrown into the mix unmashed as I used a mixer on the wet ingredients. It allows for some nice banana chunks in the muffins. Definitely cut down on the cooking time in a convectional oven. My three yearbold just finished his second muffin, they haven't even had time to cool off yet. Will try all seven grain flour next time.

Czech Stuffed Green Peppers

This is a great recipe. It would be improved on only by the addition of garlic. Never pureed the sauce and was still good with roasted garlic mashed potatoes.

Chocolate Cornstarch Pudding

This recipe will be much better after a few changes. I did add extra cocoa powder which helped however next time I will use only high quality powder like Droste. The pudding is a bit too sweet for our tastes so I will cut down on the sugar. Not fantastic but definite potential.

You know it's a good recipe when all reviews don't change anything. I am big on changing up recipes but this is perfect the way it is. Served with maple butter or jam and tea.

Creamy Hollandaise Sauce

So take this recipe and half it. Keep the yolk amount correct for a full recipes worth. Perfect amount of lemon this way,nice and thick. Keep heat very low. If it starts to curdle add another yolk, it worked for me.

Honey Graham Crackers

I like this one for two reasons. They are a great snack with a little butter spread on them and they are good for using as graham crumbs. The only suggestion I have is to age them a couple days before using them.

Cream of Asparagus Soup I

Lots of changes to this but still really good base. I don't believe in the "M" word so I used butter. There must have been an omission of the garlic so I added four cloves. I used homemade chicken stock without the bouillon cubes. We don't cook with salt and that is all they tend to add to your cooking. Added the tips after the 20 min boil along with four large chopped mushrooms. In each bowl we added another teaspoon of butter and served it with homemade marjoram bread. The perfect easy dinner. Great blend of celery, garlic, onion, and asparagus. It also helped to use organic asparagus that was the best we had ever tasted. On the table was pepper and sea salt for those that needed more of either.

Blueberry Flax Pancakes

Didn't have flax meal so I used seeds. Not so good. Let then stand for 10 minutes or so before starting to cook them and they come out fluffier. Used maple pecan butter to top with; yum!
