Whole Wheat Banana Nut Bread

I used whole grain flour, Half the oil and added cranberry sauce. Duck eggs and maple syrup. Moist and so flavorful.

Traditional White Bread

Best bread I ever made. FIL has a standing order when I make this, so I always double the recipe. Makes for great french toast.

Fluffy Pancakes

The best part of these is reading the recipe you know you can play with it and they will still be good. I took some Kefir made from whipped cream and substituted it for the sour milk and butter. Added 1/2 tsp vanilla. For the flour it was 1/4 cup whole wheat, 1/4 cup rye and 1/2 cup cake and pastry (I was out of all purpose). Only added 4 tsp sugar. These are so fluffy and tasted amazing. A note from me as I read the serving size and comments about how little it made I wondered what exactly that meant. My batch made six CD size pancakes so if you are looking for a substantial meal make a whole lot more.

Shoyu Chicken

Tried this without changing much. Marinated for about six hours and grilled. Careful when grilling as it burns very easy. Will definitely be doing again.

Caramel Apple Coffee Cake

I have too many of these to count. Extra apples and cinnamon perfect this. They freeze really well so if you a last minute "take to dinner' dessert just grab from the freezer and go. So far out of pecans, walnuts, almonds, and hazelnuts the pecans have been the best.

Perfect Chocolate Cake

This si a great cake. We needed something without milk and this was it. We found it moist, added raspberry jam to the centre and just sauced the top to stay away from the dairy.

Canned Apple Pie Filling

I did add more spice....made the cinnamon heaping tsps, fresh grated nutmeg and 1/8 tsp clove. When I filled the jars up to one inch of the top they gushed when I took them out. The ones I only filled half with syrup did not. I tried cutting down on the cornstarch as it seemed too much but in the end had to ad all that was asked for, also forgot the lemon juice to start and what a difference it makes. I will definitely make more and work on the gushing problem till I am satisfied.

Pear Butter

This is a great recipe base. I threw cored, peeled and halved pears into a crock pot and left alone for 12 hours;then a submersible blender went in. Four ten pounds whole pear I used 1/2 tsp nutmeg, zest and juice of a large orange and a cup sugar (don't like sweet preserves). Cooked it for another 12 hours and added a cup of peach puree. I will definitely be making this again.

Applesauce Brownies I

Several changes to this recipe 1/4 cup each oil and butter. 1 tsp Almond extract. 1/4 cup cocoa powder. I also did 3/4 cup white sugar and 1/2 cup brown which gives it a nice flavour as well as cuts down on the sugar. Next time I will cut it even more sugar as these still were quite sweet. 2 Tbsps Chia seeds and greased my pan with coconut oil. I will also try adding flax seeds instead of Chia for the health addition. Baked for 45 minutes. They were cake like on the first day and more like a brownie the next day. I did put the nuts and chips in the batter wich I prefer.

Shrimp and Quinoa

I have made this twice and will be keeping as a regular staple. The quinoa was good without the shrimp, although my son took care of this by eating all his shrimp and then having half of mine as well. Try this you will like it.

Quinoa Pilaf

Jam Muffins

Based on the reviews I made a few changes to try and improve this recipe. I took the milk and heated it with some butter instead of oil. I used peach/raspberry jam and added some clove (approx 1/8 tsp). The mufins were cooked at 340 in convection oven for 20 minutes. Overall I would use many other recipes before doing this one again.

Apple Lemon with Cinnamon Muffins

Husband really liked these. We both agreed that next time we are going to try with orange instead of lemon, think it will be great. Used 25% whole wheat flour and cooking time in a convection oven using frozen apples was 21 minutes. Will def. make again.

Green Bean and Potato Salad

Good way to get a potato salad without the chance of getting sick from it sitting out for long. It has good flavour and definitely needs to sit overnight for the flavours to blend. The only change was to add a little extra garlic. I gave it only four stars because I did find one better potato salad recipe here, but this one still is nice.

Gramma Bertha's Banana Cake

Banana cake? You mean 3 tonne cake; WOW was this dense. Taste is great and luckily I read other reviews before making it so I expected something heavy. Not sure if it will be made again or not. Maybe this will improve after it has aged.
