World's Best Lasagna

Absolutely amazing. My first time ever making homemade lasagna. This is how my italian friends make "authentic italian lasagna" apparently. The only differences I made: part skim ricotta, and no-boil noodles (I don't think they were as good as fresh would've been, but it was still delicious and I'd use those noodles again).

Peanut Butter Cup Cookies

These came out great! I didn't have mini muffin pans, so I used the regular size muffin/cupcake pans. I just made some of the dough balls a little bit bigger than others. The shape changed on some because of this, but it worked out perfectly. These are excellent for the peanut butter-aholic. What I changed: I used light brown sugar, Splenda blend of sugar and Splenda, unbleached all purpose flour, all natural Skippy peanut butter, sea salt, organic skim milk. Slightly healthier version, although not entirely- it's a cookie! Great recipe.

Broccoli Cheese Soup

I used Velveeta cheese, Organic Skim Milk, and Earth Balance butter. This turned out amazing and I will definitely be making it again! The onions and garlic made a big difference in bringing out the flavor of the soup.

Grandma's Green Bean Casserole

This is excellent for those cooking for people that don't like mushrooms or cream of mushroom soup! The sour cream mixture really mocked the classic green bean casserole dish, only without the mushrooms! Aside from that, it's just great overall, and very quick to prepare.

BBQ Pork for Sandwiches

This was excellent! Best thing about this recipe: VERY EASY AND QUICK! I actually found a couple of 2 lb. boneless pork roasts at Target for $3.50 each since it was close to the Use By date! Threw them in with some beef stock and cooked on low for 5-6 hours, and it fell apart all on its own. Easy to pull into pieces. My seasoning was a personal preference- some pre-made sauce that had a smoked flavor to it, plus a little ketchup, a tiny bit of salt and pepper, and some garlic powder. It was ready instantly, and just fine for us without further cooking or marinating. My girlfriend loved it!

Good Old Fashioned Pancakes

Excellent just as they are. I wouldn't change a thing! This is perfect for those of you craving warm, buttery pancakes. Just the right amount of fluff, too. Try it like this first! Tweak it later.

Fluffy Pancakes

Absolutely amazing. Doubled the recipe to 8 servings and froze a bunch of them once cooked. Fluffy, buttery, not too sweet but not too salty and plain, just perfect. I even ate them without syrup. Perfect pancake for adding fruit toppings too for some natural sweetness.

Grandma's Chicken Noodle Soup

This is excellent! I used rotisserie chicken and had exactly the amount needed. I would probably only do half a tsp of poultry seasoning or none at all, if I had to change anything. I don't really care for my noodle soups to be too herby. Overall, excellent!

Cucumber Sandwich

Excellent. I used 100% Whole Grain Fiber Bread from Trader Joe's for extra nutrition. They didn't have pepperoncinis, so I used green peppers, and now know it would've been better with the pepperoncinis- would've packed a lot more flavor! I also used snow pea shoots because Trader Joe's did not have alfalfa sprouts. I read they actually have more protein anyway!

Angela's Awesome Enchiladas

These are amazing! I didn't have onion powder, and it was just fine without it. I also used hot sauce instead of chili powder because I didn't have that either. I would definitely make these again. Used whole grain tortillas and light sour cream, and 2% cheese.

Slider-Style Mini Burgers

These are excellent! I cut the recipe in half to make 12 sliders. Used buns specific for sliders- found them at Target, made by Pepperidge Farm. Used high quality Irish Cheddar from Whole Foods Market, grated. Light mayo. 96% lean ground beef from Trader Joe's. Very quick and easy to make. Very little prep time. 50 minutes sound like a lot but it's really not! Would definitely make these again.

Lemon Cranberry Muffins

Corn Flake Cookies II

I used stevia instead of white sugar and unbleached whole wheat flour instead of all-purpose. Also used steel cut oats. A healthier version! They're great though, and I followed what others mentioned- 350 for about 10-12 minutes and they were perfect. I don't have a wire rack so I just flipped them over once I took them out of the oven.

Mad Dogs

I really liked these! I didn't think I would because I am not by any means a huge hot dog fan. I used Applegate Organic Beef Hot Dogs, and all natural seasoned bacon from Trader Joe's, as well as their Wisconsin Cheddar Cheese. The bacon didn't get too crispy even after cooking for a little longer than 15 minutes easily. The bacon slices I used were huge, though. Very long too. I would definitely make these again.

Crock Pot or Slow Cooked Flank Steak

This turned out great! I would add more onions and carrots next time. The cook time is off. I cooked about 2.7 lbs of flank steak in the crock pot for about 5 hours on low. It was tender considering the type of meat, and cooked to perfection. DEFINITELY do not cook on high for 8 hours! I was at home and was able to keep an eye on it. The taste was perfect. This was my first time cooking flank steak and would probably just buy chuck roast next time because it is more of a tender cut and is cheaper from what I can tell. Not sure of the benefit of flank over chuck. Taste wise, not overpowering, but throw in some extra veggies.

Beef in Guinness

This turned out great, but I had trouble finding regular Guinness and had to use Guinness Extra Stout. It was especially bitter/strong beer taste, which I didn't care for. Other than that, it's great. Texture is perfect, moist, tender.

Classic Chicken Noodle Soup

I thought this was okay. If you like herby soup, then this is great for you. I prefer the simple taste of chicken broth, chicken, and noodles, maybe a few veggies, and little to no herbs. Quality wise, excellent, but I wouldn't make it again. But that's just personal taste preference.

Ho Ho Cake

My girlfriend is a HUGE fan of Hoho's, and she and I both thought the filling was a little overbearing. She said (and I agree) that there is a little too much cream. I did what some others recommended and added vanilla and sugar to the cream, but it was still very Crisco-y to the taste, and in fact, it made us both sick. We typically eat pretty healthy, but thought we would splurge for her birthday. Overall, the cake was good, and she agreed with the overall consistency of a Hoho- the cream is not that dominant. It wasn't horrible, but we wouldn't make it again. The recipe could definitely use some work. I'd try something totally different next time. Oh and I did use Pillsbury Devils Food Cake Mix, and that was awesome. As for the chocolate top layer, perfect! So so good. A little weird eating raw egg, though, if you follow the recipe. Eeeek.
