Delicious Ham and Potato Soup
I made it and tripled the recipe, which was taking a risk but it sounded so good and I like to have extra in the freezer. But as I made the cream base I realized I was adding a lot of butter and flour - and calories - I'd rather avoid. Next time I'll double the amount of potatoes and carrots and celery, and then strain half of them out after cooking, put them in the blender and puree, and then add it back into the soup with just half the amount of milk - much healthier and better for you!

Spinach and Tortellini Salad
I've made it twice now and got rave reviews each time. The first time I used fresh basil instead of spinach, and the second time I used watercress instead of the spinach. The dressing was a little strong, so the second time I used half creamy Italian and half lemon basil marinade. That was smooth and very tasty. Also used kalamata olives instead of black olives. It's a great recipe!

Strawberry Jam
I wish I'd cooked it much longer than the forty-five minutes I gave it, as it fell short of jelling nicely. It is a bit tart, but it's different and that's nice. I did cut back on the sugar as advised, and found it still quite sweet.
