Rice Balls ala Tim

Made 7 humongous balls the size of baseballs. Tasty, though. I wonder if you could cut down on the rice.

Amazing Corn Cake

Disappointing results. Turned out to be just another coffee cake. Too fluffy, with not enough corn or cinnamon flavor. I won't try this again.

Sour Cream Raisin Pie V

Delicious, but a little too sweet for my taste. Next time I'll cut the sugar back a little. The meringue was better than any I've ever made. I'll use this recipe for all my merengue pies. Great recipe!

Yummy Peanut Butter Bread

This is one of the best breads I have tasted. I followed recipe proportions, exactly, using creamy peanut butter, instead of crunchy. Definitely will be a regular on my menu.

Sweet, Sticky and Spicy Chicken

I doubled the sauce recipe, and it was tasty, but the chef was the only thing that ended up sticky. Possibly this was due to the extra sauce, but we like things juicy. Not complaining, though, it was good.

Rocco's Olive Bread

Nice moist, coarse bread. I put this in the bread machine on the Dough setting, and finished baking in a loaf pan in the oven, 375 for 25 minutes. I plan to experiment in the future, substituting items like chipotle peppers, sun-dried tomatoes, and on and on. Great Bread!

Hominy con Queso

This was so easy and delicious. Had it for lunch but it would be good as a side dish or with eggs for breakfast. I used cheddar instead of pepperjack, and cut it down to a pound. Worked out perfect.

Justin's Hoosier Daddy Chili

This chili ended up "the best ever", with a few modifications. It started out too soupy, so I simmered it, uncovered, for three hours. I used three tbsp. chili powder and it was plenty spicy. Didn't use beans. Instead of all beef, I used a pound of ground pork and a half pound of ground beef. One thing I'll do different next time is omit the salt, as it was a bit salty. Still, it was the best ever!

Steff's Shepherd Pie

This meets all my criteria: Simple, quick, ingredients are already in the kitchen, and-oh, yes... it tastes good. I used the instant envelope mashed potatoes, Baby Reds, and I substituted Cream of Celery instead of Mushroom (just a personal matter of taste. This will be a regular for us.

Meatless Mushroom Tart

This was not only delicious, but a work of art, as well. There are several discrepancies, however. A puff pastry sheet would barely cover the bottom of a 10 inch pie dish- I had to transfer it to an 8 inch pie dish. I used one large chopped onion and an 8 oz. package of baby portobello mushrooms, and when mixed with the 8 oz. package of cream cheese it filled the 8 inch pie. I didn't need the yolk and milk mixture on top-it had a very nice sheen on the lattice-it looked beautiful, and the flavor was wonderful.

Roasted Portobello Mushrooms with Blue Cheese

How can something this easy taste so good? I served these like steak, with mashed potatoes and carrots, and a little worcestershire. Definitely will do this again...and again...and again!

Old Fashion Molasses Bread

This dough was the most beautiful dough ever to come out of my bread machine. I let it rise in the pan 30 minutes before baking. The bread was smooth and dense, but not too dense. Molasses flavor was a little more subtle than I would have liked, but I'd be afraid to monkey with the proportions, because the consistency was ideal.

Quick Hoppin' John Soup

This was very tasty, with several modifications. I didn't have sage flavored sausage, so I used my usual breakfast sausage, and added a tsp. of sage to the recipe. Also, I prefer a thicker stew type soup, so I left out the water, altogether. Will definitely make this again.
