Quinoa Black Bean Burgers

I make this recipe regularly and I don't know how it couldn't make any kind of eater a fan. Reviews that tell of its flavorlessness might be underutilizing their spice rack! You can really build on this recipe quite a bit, but I think it's perfect and hearty just as written. For the breadcrumbs, you can use similar measurement of flax meal, as well as throw in some chia seeds (I'd say no more than a tablespoon) to add even more fiber and Omega 3s. I also love using Ritz crackers, which are accidentally vegan, so you could make this whole recipe vegan with an egg substitute (flaxmeal works like this as well). I've done several kinds of peppers too. Top with mashed avocado, eat alone with a slice of cheese, put on top of salad greens or burger it up. Definitely, definitely try this very very healthy, hearty recipe. Thanks for this!

Biscotti

I can't believe how easy this recipe is. These biscotti are nice and not too hard like store bought, as one other reviewer noted. The holidays are coming up and I made batch after batch last year. THANK YOU for such a GREAT recipe. I've added almonds, dried cherries, diced dried apricots, amaretto, ground coffee, cocoa...you can vary on this for days. Thumbs way up for this one.

Veggie Cheese Casserole

Curried Coconut Chicken

THANK YOU, Roma, for one of the simplest, easiest, most delicious recipes I've ever inherited or found! This is amaaaazing and delicious and had my boyfriend thanking me for days. TIP: I first made it without the tomatoes since I was out, and cooked the chicken all the way through. It ended up overcooked and rubbery. Might be the high altitude I live in, or the electric stovetop set a bit too high. I also simmered it covered, which will take away juices. The 2nd time, I only browned the chicken in the curry, oil, onion, garlic sauce. Then added the coconut milk, tomato sauce & tomatoes & simmered UNCOVERED. At about 30-40 mins, the chicken was cooked, tender, juicy, and you could pull it apart with a fork. Just a tip for anyone maybe new to cooking chicken or meat or just cooking. This recipe is HANDS DOWN DELICIOUS.

Quick and Easy Green Chile Chicken Enchilada Casserole

Made this for the first time for a potluck picnic and it was a HIT. I halved the recipe, 2.5 quart casserole dish, boiled the chicken instead of baking (first time!), and mixed the sour cream with chili powder (so good, do try), did not char the tortillas but tore them - turned out perfect. Try to leave a few tortillas at the top next to the casserole dish for some extra crispiness. Next time I will make my own salsa verde (tomatillos, white onion, cilantro, season from there) as the canned one I used was too spicy but this has nothing to do with this particular recipe. Thank you so much! Yummy, comforting, and delicious.

Mmm-Mmm Better Brownies

Whoa my gosh, you guys. Best brownie recipe ever! It's a Friday night and my date is these brownies. They are so delicious. Excellent recipe, the best I've tried. I had to bake about 12 mins longer @ high altitude, and came out perfect. I will definitely bake this recipe again, and add even more deliciousness. And such an easy recipe! Do try!
