Liege Belgian Waffles with Pearl Sugar

Excellent recipe! I didn't have sugar pearls and couldn't find them locally, so instead, I bought a box of sugar cubes, put them in a plastic bag and pounded them with a rolling pin until I had pearl sized sugar pieces. I used a sieve to sort out the pieces from the loose sugar and a box made about 1 1/2 cup pieces and a half cup of loose sugar. I did find that keeping the waffle maker on medium and cooking them for about 4-4 1/2 minutes each made for an evenly browned waffle and minimal butter loss. Keep in mind, I don't have a fancy waffle maker, just a simple little round Oster waffle iron that I bought at Kmart for $18. The pearls would have been best, but they came out nice and crisp, buttery and with the sugar in nice little lumps all over. I took the loose sugar from above and made an almond sour cream filling with 16 oz sour cream, 1/4c sugar(approx.- sweeten to taste), 1 tsp almond extract, 1/2 tsp vanilla extract. I also made a berry topping with approx 2 tablespoons of sugar, 1 cup blackberries, 1 cup blueberries, 1 teaspoon of lemon juice. I cooked the berries until they boiled- pureed the mixture and added 1 teaspoon of cornstarch and then cooked it on low until thickened. All together it made a fantastic brunch dish!

Cucumber Pasta Salad

Great basic summer salad. I add a bit of salt and pepper to mine and use scallions instead of onion... Milder flavor to go with the salad.

Key Lime Cake III

I didn't try to make the cake, because I am not a fan of orange juice... So I found another recipe for that. However, I made the frosting for this because it seemed so unique to me. Boy am I glad I did! The frosting is fantastic!

The Best Ever Classic Jewish Noodle Kugel

The flavor was excellent. However, I tweaked the recipe a bit, I reduced the sugar slightly and added honey and a dash of ginger. The only thing I would do differently is bake it in a 9x9 pan because the one reccomended in the recipe- I like mine thicker and more custardy.
