Chicken Pot Pie I

This recipe is bland, bland, bland and way too pre-packaged/processed for my taste. To anyone wanting to try this recipe I suggest adding some fresh or dried thyme and plenty of freshly ground black pepper to liven it up a bit.

Hawaiian Chicken Salad

Ok, here's what I did. Scaled the recipe down to 3 servings since I wasn't 100% sure how well I would like this, used two medium sized teriyaki-glazed grilled chicken breasts cut into small cubes. I used Neufchatel cheese and halved the amount called for in the recipe. I toasted the almonds and added some flaked coconut and a couple squirts of canned whipped cream. If you are a fan of coconut, I definitely recommend adding it. It was sooooo good. Also definitely refrigerate it overnight to let the flavors meld, it makes a huge difference.

Curry Chicken Salad

This is a basic recipe that would benefit greatly from some simple additions such as golden raisins, toasted almonds, plain yogurt and mango chutney. Sometimes I add grape halves instead of raisins or mandarin oranges depending on what I have on hand. I also use hot Vietnamese curry powder because it has so much more depth of flavor than the run of the mill supermarket variety.

Pad Thai

This is a bare bones recipe for Pad Thai. Here are my observations: Make sure your wok is very hot, to the point where the oil is about to smoke. add a clove or two of chopped garlic and a couple chopped scallions to the hot oil and fry for 30 seconds. Add thinly sliced chicken and some shrimp and fried tofu and fry for a couple minutes. Crack the eggs in there and stir for a minute or two. Turn in the noodles and fry for a 30 seconds. Add the fish sauce which has been mixed with a little rice vinegar, soy sauce and lime juice. Add some ground peanuts and stir fry the whole mess for a few more minutes. Remove from heat and serve with additional peanuts and fish sauce, crushed red pepper, cilantro leaves, fried scallions and lime wedges. Oh yeah, and omit the butter. It's really not necessary. I also omitted the bean sprouts because I don't care for them.

Southwest Chicken Casserole

I made this with fresh, cooked chicken breast and it was still horrid. I don't even want to imagine what it would have tasted like with canned chicken. I only gave it the second star for quickness.

Chicken Veggie Stir Fry

This recipe is very lacking. The ramen seasoning gives it an unappetising artificial flavor. Try omitting the ramen seasoning and add some chicken stock, sherry, garlic, ginger and brown sugar to the sauce. You will be amazed.

Becky's Chicken Salad

I rubbed the chicken with a little olive oil, basil, onion powder, salt and pepper, and grilled it on my George foreman grill. I also used light whipped cream in a can, half light miracle whip half light mayo, a pinch of sugar and a few squirts of dijon mustard. I served it on whole wheat bread with leaf lettuce. It was fantastic!
