Basic Ham and Bean Soup

Wanting to do something with a leftover ham bone, I tried this soup, making a few changes. First, I cooked the onion, garlic & celery (increased to 2 stalks) in some olive oil. Put it in a crock pot & added a packet of Vigo seasoning, which made the color & flavor richer. Yummy!

Slow Cooker Chicken and Noodles

Good basic recipe, but I, like others, prefer more seasoning. That's actually the beauty of it, that you can add what you like. My additions included 2 cloves chopped garlic, a bay leaf, a packet of Vigo seasoning (which also gave it a nice color), sage, and chopped baby carrots. Yummy! It's a rare cold day here in the south, when we can really enjoy it.

Alfredo Sauce

YUM! Quick & easy, tasted great. Made a few changes: used half & half instead of heavy cream & omited the egg yolk and it still thickened up fine. Kids loved it!

Microwave Lemon Curd

No Bake Peanut Butter Pie

Yum! Halved ingredients and made one pie. Used Extra creamy Cool Whip & added only a few tablespoons of milk. Topped with chocolate syrup & chopped peanuts. Will try the Nutter Butter crust next time.

Juiciest Hamburgers Ever

Yum! Made these on the Foreman grill & used a tore up piece of bread, instead of bread crumbs because I didn't want them to taste like meatloaf. All the teens, even my picky son, loved them. If time permitted would have put bread in processor, or maybe use panko next time. Defintely live up to their name. Will use this recipe on 4th.

Molten Chocolate Cakes With Sugar-Coated Raspberries

First had this dessert on a cruise & loved it! This recipe tastes just as good. Definitely use good quality chocolate. Followed other's recommendation and placed in fridge for a little while and then allow to come to room temp before baking.

Citrus Turkey Brine

Caramel Corn III

I frequently take a batch to get togethers and it's always a hit. I make two regular bags of Orville Redenbacher microwave popcorn and put the caramel over it. I bake it all in my Dutch roasting pan (big oval with high sides). Clean up is easy if you put the pan in hot water. It's sweet, salty, crunchy, the perfect snack food.

Savory Chicken Breasts

I had forgot about this recipe. It's really good! Even my kids said it was okay, which is high praise from them! I made a few changes. First of all, Campbell's has a Cream of Chicken & Mushroom Soup, which added extra flavor. When the dish is just about done I add a few ounces of beer (any kind). The alcohol cooks off and it adds a great flavor. This dish is also versatile and can be served with mashed potatoes, rice, or pasta.
