Eggplant Parmesan I

Very tasty! I made the recipe exactly as written and served with angel hair pasta. Hubby declared it the best Eggplant Parm he's ever had.

Nanny's Spaghetti Sauce

With a couple of changes, this is a 5-star recipe. Instead of 2 cans of tomato sauce, I use 1 can of tomato sauce and one can of stewed tomatoes. I also slow-cook it on low all day rather that stove-top cooking it. That makes it fantastic.

Spanish Rice II

I've made this twice. First.. as written, and it was okay, but not outstanding. Then I made it with the alterations described by Jodi Lynn. Bacon grease instead of veggie oil, garlic sauteed with the peppers/onions (all sauteed until tender BEFORE adding the rice to brown), using chicken broth rather than water, and adding a bit of cumin. (I did not add parsley, though.) It was FANTASTIC. Everyone loved it.

Peach Pie the Old Fashioned Two Crust Way

Wonderful filling recipe! I made the crust from scratch instead of using store-bought, so I didn't brush with an egg. Also, since some reviewers said it was a little tart with the lemon juice, I juiced half a fresh lemon over the peaches rather than using bottled stuff. I didn't put butter on top either - the homemade crust has plenty of butter. It turned out delicious. The kidlet says it's "heaven on a plate" and the SO declares it the best pie he's ever eaten. I agree with both!

Whipped Cream

Nice basic recipe. Perfect if you double the sugar and halve the vanilla. Also, chill bowl and whisk before making. If you don't use it all the first time, just whisk it briefly again before serving the second time.

Slow-Cooked Pulled Pork Shoulder

I've made this 3 times now, and it was best when I soaked it in vinegar/water for 12 hours, then added the kosher salt, then soaked for another 12 hours. Not too salty, not too tangy. Perfect!

Pepperoncini Beef

Fantastic! I've made this with a few different cuts of meat, and it turns out delicious every time. I serve it on french bread, often with mozzarella or provolone, sometimes by itself. The family loves it either way.

Chocolate Gravy II

I started using this recipe 2 years ago to share some ""southern" food with my IL-raised boyfriend and his family, and they all loved it. I grew up on chocolate gravy, and I think this recipe is fantastic as well. It never seems to make a "thick paste" after the cocoa and flour, but I move onto the next step and it does thicken up nicely. Continual whisking ensures that it doesn't burn, and helps it thicken. Perfect taste, perfect texture!

Sweet and Sour Meatloaf

I've used this recipe for years. I made it for the first time 9 years ago, at age 16, for my first boyfriend. He said it was the best meatloaf he'd ever had. I've made it numerous times for my current significant other since then, and he agrees. I don't change a thing.
