Shrimp Linguine

This rivaled any shrimp linguine that I have ever had in a restaurant. My husband even said it was the best he ever had. If I could give it 6 stars, I would. I had a package of frozen jumbo shrimp in the freezer, so used that. Didn’t have any whipping cream, so blended some cottage cheese and used that. BTW, that is a good low fat substitute for sour cream in dip recipes. I used the dried parsley, basil and thyme that I had in my spice cabinet, though I will use fresh if possible. Added half a chopped onion (only because we love onions) and crushed red pepper with the minced garlic. Also put half the parmesan cheese in with the cottage cheese cream mixture to thicken it up a little. I only had whole wheat spaghetti pasta in my pantry, but that was fine. If I’m out shopping for this recipe, I will get linguine, but it was Sat. evening and I didn’t feel like running to the store. Next time I may try 4 tablespoons of butter to try and reduce a little fat but hey…it is supposed to be buttery. Can’t wait to serve this to guests. This is definitely a keeper!

Best Ever Banana Bread

I've always used the same recipe and decided to try something different. This beat anything I used to make. It was so moist. I keep powdered buttermilk in the fridge and it was perfect for this. It was pretty sweet so think next time I'll only put in 1 cup of sugar. I used the recipe for 2 small loaf pans and it was perfect. I'll never make anything else.

Pumpkin Pie Spice I

Although I love my pies with the pumpkin pie spice in the small bottle, I refused to pay the outrageous price for another. When I saw this recipe with the same ingredients that were on back of the bottle, I decided to give it a try today. Added one tablespoon to the pumpkin mix and it turned out fantastic. All I can say is yum... I'm ready for Thanksgiving.

Scrumptious Salmon Cakes

I love salmon so even the simple salmon cakes we had growing up were delicious to me. Since we couldn't eat meat on Fridays, we had them every so often. They were just made with crushed saltine crackers, eggs and salt & pepper. This recipe knocked that one out of the park! Made as directed except for halving the recipe since it was just for my husband & me. Didn't have Old Bay Seasoning on hand so looked up a recipe for it and used that. Loved the Panko instead of crackers or bread crumbs. This is my official salmon cake recipe from now on. Fast and super delicious.
