Amy's Cilantro Cream Sauce

I've made this a few times and it was a little spicy. This time I made it with LaVictoria medium Salsa Verde and my kids couldn't stop raving about it. We used it as a topping for empanadas one night and then for baked chicken and spanish rice the next night guacamole. It is also a great dip for appetizers. Thanks for the recipes!

Laura's Unbelievable Chicken and Pasta

As the other reviewers said, this is a good base recipe. I seasoned the pieces of chicken and sauteed them with onions and mushrooms. Then I added the broth, a can of cream of chicken, the cream cheese, spinach and a can of diced tomatoes w/basil, garlic & oregano, let that simmer and then stirred in the pasta and Parmesan cheese. We did find that it needed salt and pepper but my husband and I really liked it where as my children didn't really care for the spinach but liked the rest of it. I think if I would have used fresh spinach it would have been better.

Pesto Sauce

I have two boys ages 8 and 12 and they both love this pesto and say it is better than any they have had in restaurants. I follow this recipe exactly and put it on chicken, pasta and even make pizza with it. Thanks Sal!

Easy Meatloaf

My 12 yr old son requested meatloaf and the whole family thought this one was amazing.I gave this 4 stars because of the sweetness of the glaze on top. Next time I'll just really reduce or leave out the brown sugar. I served it with mashed cauliflower similar to the recipe on this site. I had 2 lbs of ground beef so I added 2 eggs, 1 1/3 c of both milk & bread crumbs. I did modify the recipe per other reviews by using only 1/2 onion and adding 1 pkg onion soup mix, some Italian seasoning, a couple shakes of Worcestershire in the meat and also in the glaze but I think if I would have just made the recipe as written I would have still given it a 4. Dumplings

I made Slow Cooker Chicken and Dumplings by: Janiece Mason, but I didn't have any biscuits so I tried this recipe and used dried parsley and added another tbsp of butter. I rolled the dough out, cut 1" squares and put it in with the chicken about 1 1/2 hours before serving. My family loved it and it was so easy to make. Thank you

Kielbasa with Pasta

I didn't have stewed tomatoes so I used one can of diced tomatoes with basil, oregano and garlic and one can of regular diced tomatoes. I also added red bell peppers and other seasonings to try to give this dish a little more flavor but even doing that my boys ages 8 and 12 only ate what was on their plate to be polite, saying that they didn't like it. Maybe if I would have added red pepper flakes it may have given it a little more of a kick but this is one recipe that we will pass on in the future.

Tender Italian Baked Chicken

I found a recipe similar to this about 20 years ago and wanted to try this one. I had to add more mayonnaise and a little milk to thin out the mixture because of the amount of Parmesan cheese, (next time I will use 1/4 cup) it was a good recipe. I use chicken tenders or cut up breasts into bite size pieces for my kids. If you are in a hurry and don't mind the fat, I have even fried these in olive or canola oil for my kids. They love them both ways.

Red Beans and Rice

This is a good base recipe and with some changes my family loved it. Instead of butter I used olive oil. I replaced the tomatoes with diced tomatoes with green chiles, added about half a cup of water and added a can of pinto beans along with the kidney beans (the only other kind I had). I seasoned it with garlic powder, black pepper, salt, cumin and green chile powder and before serving I stirred the rice into the bean mixture.

Slow Cooker Chicken Taco Soup

My family and I loved this recipe. I made a bigger batch because I had larger cans of some of the ingredients and I also used chicken broth instead of beer, put the chicken in frozen and added a few more seasonings but I think if I followed it as is it would have still been incredible.

Bacon Cheese Frittata

This recipe is very easy and even the kids liked it. I had to make some substitutions because I didn't have things all the ingredients in the house though. I followed the recipe but I used ham, swiss cheese and white onion finely chopped. A great base recipe. Thanks!

Grilled Zucchini II

I slice zucchini and a yellow squash and marinade them in the dressing over night. Then I grill them and add parmesean cheese. It is fantastic.

My Mom's Swiss Steak

Even my 4 and 8 yr old boys loved it!I did make some changes based on other reviewers though. I coated the round steaks with flour seasoned with garlic and onion powder, salt, pepper and italian seasoning then browned it on both sides and just added 1/8 cup each chopped red, yellow and green pepper, 1 stalk celery chopped, 1/2 onion cut in rings, 1 can stewed tomatoes, 1 can mushrooms drained, and 1 cup beef broth-covered it and let simmer for an hour-then served it over brown rice. It was a little watery, I probably should have only used 1/2 cup broth but the meat was tender and full of flavor.

Honey Baked Chicken II

We really enjoyed this recipe. I did follow the advice of other reviewers and doubled the sauce but decreased the butter. I should have just left the butter out though. I also added paprika, thyme, basil, garlic and onion powder and pepper for some more flavor. My 8 yr old son even dipped his cauliflower in the sauce and said it was great.

Chicken Salad Wraps

I needed a last minute recipe for a casual baby shower and thought this would be good. I first tested it out on my husband using sour cream like the other reviewers suggested. He loved it but I thought it was just ok. When I made it again for the party I used mayo instead and it was great. The only change I made was to add green chiles. I mixed everything up the night before so the ingredients could meld then a couple hours before the party I put it on tortillas with shredded cheddar and shredded lettuce, rolled them up and put them in the fridge until party time. Then I cut them into pinwheels. I also made ham, cream cheese and olive pinwheels but the chicken ones were eaten twice as fast as the others. A teenager even said they tasted as good as Taco Bell (I guess that is a compliment coming from someone that age)

Creamy Au Gratin Potatoes

This is a great base recipe. I did make a few changes though. I boiled the potatoes before so I could cut the oven time down to 30-40 minutes. I also only used 1/2 an onion and sauteed it in the butter then followed the recipe except I added pepper. I then put half the mixture over the first layer and the rest over the second layer. I then put some shredded cheese on top and took the foil off for the last 5 or 10 minutes to brown it. My kids loved it and they are picky eaters.
