Awesome Baked Sea Scallops
I used a 12 oz bag of peruvian bay scallops i had in the freezer. I kept the butter, garlic, and onion amounts the same. I also lighlty seasoned with the nutmeg, salt, and pepper. I didn't use any parsley. And as other suggested, I sauteed the onions and garlic in the butter first. When I placed it all in the baking dish, I simply sprinkled bread crumbs on top by hand, probably only using 1/4c. Baked for about 10 min... Fantastic!! (I also learned something new: scallops shrink when you cook them! lol Definitely need to make MORE next time.)

Crab and Seafood Stuffed Shells
With the cup of mayo, I added about 10oz fresh crab meat from the grocery store and a 8oz bag of cooked "salad shrimp" (thawed), onion, cheese, and little bit of old bay seasoning. VERY TASTY! However, even with the increased meat, i feel it still could've used a little less mayo. I actually placed the seafood mix in a dish and into the oven to warm it up prior to stuffing the shells... Also, as suggested by another review, I lightly topped the shells with a warm parmesan sauce (bar of cream cheese, 1/2c parm cheese, 3/4c milk, dash of pepper & nutmeg- microwaved in a bowl for 7-8 min until creamy). This dish was a nice accent to our steamed zucchini... THANKS!

No Time to Cook Chicken
SO EASY! Because of my work day, the chicken was cooking in the slow cooker for 10 hours... I slightly seasoned the chicken the night nefore with salt and pepper. Since I was cooking 6 breast halves, instead of 4, i added a little milk to the soup. Also at the end, I added a full cup of sour cream. This chicken tasted GREAT!!!! We ate it over rice and steamed asparagus. The sauce is definitely a good accent for vegetables, so I will be tryin this recipe will a variety of sides.
