Butternut Squash Soup

Yum! However I did take the recommendations of several others. I roasted the squash...reduced the cream cheese...and added milk. Then.....I added some garlic and roasted chicken...the chicken really finsihed it off!!! Definitely a wonderful combination of creamy and delicious!!!

yuck! Definitely tough...tried adding a little water and soy sauce to give more flavor and make it more tender...didn't not help with the 'tough'....

Oatmeal Banana Nut Bread

Everyone loved it!!! I added two Tablespoons butter so it would not be dry...after reading other reviews. It also had to cook longer than 55 minutes to get the center 'done'...but it turned out wonderful!!!

Mimi's Eggplant Casserole

I picked a large and medium eggplant from my garden. I still used recommended portions on ingredients. However instead of boiling the eggplant, I steamed it. Less water to get out that way! I also didn't use quite a full can of soup. I divided it in half (before spices). Half I cooked with oregano, savory & thyme, and the other I cooked with curry & tumeric. They are both wonderful!!! I did not use the cornbread at all. I want to freeze the extra. I will add bread crumbs or extra cheese when I reheat them. The flavor is great!!!!
