Simple Garlic Shrimp

Absolutely delicious! Placed cast iron pan in an oven I heated to 400 degrees. Prepped all ingredients in advance --- chopped garlic, chopped parsley, juiced lemons, measured juice, added caper brine. Rinsed shrimp and shook off most of the water. Pulled the hot pan out of the oven, placed it on a high burner, added the oil and started cooking - it was done in less than 5 minutes once the cooking started. So fast! So easy!!! Anytime you get a recipe that the hardest part is mincing garlic ---- you know you have a winner. This cooks so fast, you not only have to have your ingredients prepped, you need to have all of the side dishes ready, also. I only had time to toast the bread --- not even time to throw together a salad --- once this started.

Oven Pancake with Apples

Like another reviewer, I love having the apples cooking while preheating the skillet. I have made an almost exact recipe for years and I came looking for the oven temperature. The recipe that I have calls for 4 Granny Smith apples. Which improves the "apple" taste. My recipe does not call for sugar or cinnamon on the apples, either. The recipe that I have calls for a brief stir of the batter - it is not smooth, but lumpy. When the batter is added to the hot pan, you shake the pan to settle the batter into the apples. And the apples float. At the end, the recipe I have calls for cinnamon sugar topping (1 cup sugar, 2 T cinnamon, mixed) sprinkled (poured) over the top (which is cracked) and then a 1/2 cup melted butter is poured over the sugar. Than the topping is placed back in the oven to melt the sugar topping. Today, I tried my recipe and used 2 Fuji apples and 2 Granny Smith --- this is not a good idea because the Fujis are way too juicy.

Golden Peach Pork Chops

Sweet-and-Sour Cabbage

Loved this. Well balanced between the sweet and sour, and neither overpowering. The cooking tims is just right. The cabbage is done, but still retains some resistance --- it is not mushy. Thanks for sharing!

Elaine's Ham, Potato and Cabbage Soup

this was delicious - my whole picky family loved it! I tried to follow the recipe exactly, but I made 3 changes out of necessity. I had celery that was past its prime, so I added it to sneak in some more vegetables. I doubled the recipe and substituted 2 C water for 2 C chicken broth. My husband is allergic to nitrites and nitrates and I could not find bratwurst without them, but I did find ham without. So good!

This is so delicious and easy! It has become my go to quick recipe. I double the sauce ingredients and serve the sauce over pasta (which I slightly undercook and add the sauce and contine to cook in the pan). With salad or broccoli, it is a perfect elegant meal.
