Pollo Mediterranean

This was very good. Everyone loved it and thought it was fabulous! I used capers instead of green olives, chicken broth instead of wine plus added mushrooms. Great!! I will make this again!

Grilled Asparagus

I make this recipe but use fresh garlic, along with the other ingredients, in a skillet. The best!! May have to try it with the fresh grated Parm though-great suggestion!

Ham and Swiss Casserole

This was very good; my entire family loved it. I used 1.5 cups, instead of 1 cup each, of both cheese and ham; I like more. Plus, I added and extra 1/2 cup of milk and 1 can of 98% Fat Free Cream of Mushroom soup to the mixture. My parents are picky and even commented on how tasty this was. I have already made this twice.

15-Minute Chicken Parmesan

This was a very good dish. It's not typical for me to buy packaged breaded chicken but as a time saver they worked. I used 1/2 the sauce b/c I thought the entire jar would be too much, but I was wrong. There wasn't enough to coat the spaghetti. I would use the entire jar next time and a different brand of Chicken-should have bought Tyson instead of Banquet.

Chicken Scampi II

This was a tasty dish. I agree with some of the other comments that other ingredients could be added for texture and flavor. I doubled the butter, added less olive oil and added 1/2 c chicken broth (white wine probably would have been tastier). Also, next time I will marinate the chicken breasts in the herbs to make the chicken more flavorful to tie in with the dish. My chicken didn't have time to absorb the wonderful fllavors with the cooking time. Thanks for the recipe. I will make it again with some tweeking.

Carrot Chile and Cilantro Soup

This was easy and delicious. The flavors were subtle. I used chicken broth instead of vegetable, b/c I didn't have any veggie. When mentioning this recipe, everyone was like "ugh! carrot soup", but this had even my kids loving it! Definitely will make this many times over.
