Dad's Asian Slaw
I added a bag of broccoli slaw for added nutrition and texture, as well as an additional package of ramen noodles. Great, easy, inexpensive, healthy recipe for last-minute pot lucks or bbq!

Barbie's Tuna Salad
I made this for my husband to take for sandwiches for lunch - I myself don't care for canned tuna in any form. He pronounced it the best tuna salad he'd ever had so I tasted it myself on a saltine and it was good!! I doubled the recipe on all but the mayo adding just over 1 tblsp and it was dry but workable. I was worried about the amount of relish and it did over-power the tuna somewhat, which may be why even I liked it. This will definitely make it into my regular rotation :)

Sauteed Swiss Chard with Parmesan Cheese
Excellent and simple. I subbed vegetable broth and a little white wine vinegar for the white wine because we didn't have any in the house and it was still excellent. Don't forget the lemon and cheese - they make the dish!
