Slow Cooker Simple Beef Bourguignonne

My husband put this together for me. YUM. We had port wine on hand and just standard cr of mush soup. Used fresh baby carrots and shallots. The outcome was very good. Hubby got a late start so started on high for first 4 hours. Served one hour later over steamed rice. I am quite proud of his new bravery in the kitchen thanks to this website. We both have recipes sent in emails sent to us each day. And I use the 'ingredient' feature quite often. just as I did with this recipe. It had been sent to me a few weeks back. When hubby asked me, "what do you want me to do with this top round piece if meat?". Ta Da.

Refried Beans Without the Refry

Could NOT be any simpler! Very flavorful. I'll be using this method forever now. I'll also buy pinto's in bulk to always have on-hand. I did not have any fresh jalepeno on hand so used small dried chili's; 3 - 4. Before smashing the beans I removed them. We were feeding a toddler too. It was NOT spicy. Just very flavorful. I also added some cubes jack cheese while smashing. Thank you for the great recipe.

Slow Cooker Sweet and Sour Kielbasa

I brought this to a pot luck luncheon which themed soups and stews- all around winter comfort foods. These bites were well received - they complimented the other offerings. Easy to prepare. Easy to place it all in the crockpot and serve when everyone else is ready. The sauce is very pretty too. I will increase the spicier ingredients next time. (for my own taste) I used a very heavy hand with this first preparation -but this recipe can easily handle it. I tripled the recipe for this luncheon and my crockpot could have still accommodated another sausage maybe two. I would not increase the sauce though. The sauce thins as it cooks through the day with the lid on.

Savory Slow Cooker Squash and Apple Dish

One squash and 4 apples is teetering on overflowing my smaller crock pot, but I sat on the lid :) I love the smells. I am a bit concerned there is no liquid added... but I am following the recipe as written. I can't wait to taste this. The weather is rainy - this should be perfect! so far I'm giving it 4 stars The dish is very close to tasting like applesauce. That is not a bad thing, but I was looking forward to a more savory taste. My concern about liquid was not needed the dish created it's own. Hubby really likes the dish. Anyone think adding salt or sage or celery seed will enhance a savory touch? I think I would cut back on the apple, I used fuji's - 4 big ones. Very dominant flavor. Love the cranberry tartness. Thank you for the recipe

Campbell's® Easy Chicken and Cheese Enchiladas

This recipe is so versatile. I learned of it from my boss. Since following the original recipes, I have modified in the following ways: 1. Layered the corn tortilla's like lasagne. (because I had forgotten to save some of the sauce on the side to top with - it was all mixed with the chicken). 2. Cut the corn tortillas into small pieces - folded everything together and used a crockpot for heating (served this at a pot luck). Both of these methods are really forgiving and are easy to serve up. I add a few cans of chopped green chili's - they are really mild to me.

Hamburger Steak with Onions and Gravy

Yummy. Thanks this suggestion. I also appreciated the substitution for cooking sherry from one of the reviews. (vanilla) I would have never guessed that! Everything worked just right.

Slow Cooker Tamale Pie

I used the oven method with a 13" x 9" x"3 pan @ about 380 deg. I had many of the ingredients already in my freezer from over preparing for a batch of chili. (That is how I found the recipe... I used the ingredient function: ground beef, kidney beans) My beef mixture already had sauteed onions in it. I added a can of whole kernal corn to the beef mixture as well as the corn bread batter. I added a small can of sliced olives, a med size can of chopped green chilis. I forgot to add the cheese, darnit! Boy this was easy! I'll be making this again. I bet it's even better with the cheese! I baked until the corn bread was golden brown. Next time I believe I'll bake the basic ingredients about 25 minutes before I add the cornbread batter to the top. I think it will be better. I think it will also help the cornbread cook from the underside.

Yammy Chicken

Flavor is "spot on". I used fresh rosemary from th flower bed, fresh sweet potatos, and much much more of them than the recipe called for. But it was still lacking more side features. The chicken was very flavorful. It just seemed like I could have laddled this over something. But what? (not another starch!) There was quite a bit of soupy liquid. I will try this again, my husband loves sweet potatoes, but his only exposure was candied.... at the holidays. His palate is expanding! (I am liking them more now myself)
