Cajun Chicken Pasta

To cut fat and calories, I used 3/4 C half & half and 3/4C milk in place of the heavy cream. Came out wonderful and I didn't miss the fat! I also skipped the mushrooms due to family preference... Yummy!

Cherry Chicken Salad

Dried cherries are plentiful here in Michigan so I used the real thing! I'm not a very experienced cook so I had to look up exactly how to toast pecans: 1. Preheat oven to 350°F.; 2. Lightly spritz baking sheet with cooking spray.; 3. To toast pecans, put them on a baking sheet and toast them just until they become aromatic, about 5 minutes.; 4. You have to watch them carefully as they are easily scorched.

Olive Pecan Spread

I thought this was extremely salty so I added some sour cream to "cut" the saltiness. I also used a food processor to mix so the ingredients were not so chunky as some people might like. My friends, however, LOVED it and didn't say it was too salty at all! Big hit at a football game!

Pesto Chicken Florentine

I loved it; my husband said "so-so". I used frozen spinach which I think was a no-no. Will try with fresh spinach next time.... Don't know what they topped it with in the picture (tomatoes? Red Pepper?) but it looks yummy!

Rigatoni with Eggplant, Mushrooms and Goat Cheese

I left out the mushrooms because my teenagers don't like them. I used black olives because I didn't have kalamatas. I also chopped the eggplant more finely so it would cook faster. It was delicious! My husband who doesn't think he likes eggplant had two huge servings!

Sausage Marinara Over Pasta

Fra Diavolo Sauce With Pasta

I, too used canned tomatoes (oooh, for shame!) and it tasted GREAT! My husband had two heaping servings. I only had scallops so I used them with no shrimp. I added only 1/4 t red pepper flakes because DH doesn't like spicy. I also added some other Italian spices (oregano and basil). Yummy!

Cafeteria Carrot Souffle

Way too sweet for my taste (I don't like any "sweet" vegetable dish). HOWEVER, my husband (who refuses to eat cooked carrots) loved it; he thought it was pumpkin! In the future I'll add a touch of cinammon and reduce the sugar...

Zesty Slow Cooker Chicken Barbecue

Made as recipe advises; used Sweet Ray's honey chipotle BBQ sauce. It was okay; 11-yr old daughter loved it (I had to use 3 napkins!) and husband liked it. I thought it was okay. Served on potato buns.

Spinach and Orzo Salad

I've been looking for a recipe that resembles one from a local grocery's deli. This is the closest I've found. To make it more like the deli version, I added chopped tomatoes (the deli uses cherry or grape tomatoes) and mushrooms. I omitted the pine nuts simply because I didn't have any. It was delicious!!!

Chicken Gruyere with Sauteed Mushrooms

I went against the French and used olive oil to brown chicken; worked fine and saved some calories. I also added a bit of minced garlic. Ate plain (not over rice or noodles). It was GREAT!

Fresh Broccoli Salad
