Chicken-Spinach Casserole

Cut in half for 3of us. It was good but tasted pretty processed. I used fresh spinach which added a little more umph.

Cheesy Baked Grits

Delicious but WAY too much butter! I will cut in half next time. Don't see the need to add an egg (as suggested by other reviewers), I liked the consistency. Might try with 1/2 milk and 1/2 water next time to make even lighter.

Wild Rice and Pepper Salad

Waldorf Brown Rice Salad

Pretty good. Used dried cherries instead of raisins. Also used 2cups rice. I could have chopped apples into smaller pieces, personal preference.

Cheesy Cheeseburger Pizzas

Didn't have any pepperoni (don't care for it anyway). Added some fresh mushrooms to several of the pizzas. Teenaged daughter complained she couldn't taste the feta enough... I'm inclined to agree. Otherwise, quite good, fast and tasty! Also used Grands brand flaky biscuits. Rolled them out on board with rolling pin and pre-baked them for 5 minutes. Worked well.

I used fresh mushrooms (uncooked) on one half when I was layering the sauce/noodles because my kids don't like mushrooms. It worked out well. The sugar adds a different taste; very interesting. Instead of tomato sauce I used tomato soup (I had LOTS on hand); which also made it a bit sweeter. Husband LOVED it -- had three helpings.

Cajun Chicken Pasta

To cut fat and calories, I used 3/4 C half & half and 3/4C milk in place of the heavy cream. Came out wonderful and I didn't miss the fat! I also skipped the mushrooms due to family preference... Yummy!

Cherry Chicken Salad

Dried cherries are plentiful here in Michigan so I used the real thing! I'm not a very experienced cook so I had to look up exactly how to toast pecans: 1. Preheat oven to 350°F.; 2. Lightly spritz baking sheet with cooking spray.; 3. To toast pecans, put them on a baking sheet and toast them just until they become aromatic, about 5 minutes.; 4. You have to watch them carefully as they are easily scorched.

Olive Pecan Spread

I thought this was extremely salty so I added some sour cream to "cut" the saltiness. I also used a food processor to mix so the ingredients were not so chunky as some people might like. My friends, however, LOVED it and didn't say it was too salty at all! Big hit at a football game!
