Tofu Parmigiana
AWESOME - and I was skeptical at first! It's surprising how well the tofu goes in this. I do drain and freeze my tofu first - then thaw it out, and do a flour/egg wash/bread crumbs coating like others suggested. One of my new favourites.

Lentil Loaf
A really wonderful lentil loaf. We eat this almost every other week, with mashed potatoes and a mushroom gravy. Filling and tasty!

Artichoke Spinach Lasagna
