Double Layer Pumpkin Cheesecake

This pumpkin cheesecake was TO DIE FOR! Seriously, took it to Church and EVERYONE loved it-wanted the recipe after the first bite and didn't stop at one, two, or even three pieces! I made a few substitutions--I really love creamy cheesecake and creamy pie, so I used Whipped cream cheese- 3-8 oz packages, so 24 oz in total. It was definitely creamy, but not too creamy! However, this did make the batter thinner so I was able to make a whole pie AND a dozen mini cheesecakes! The mini ones were almost more of a hit--I had to improvise because I didn't have graham crackers so I used vanilla wafers, crushed them and added nutmeg, cinnamon sugar and clove (just pinches of each) to bring out those spices in the pie. Add a little bit of butter so the wafers stick together, spoon them and press down in cupcake molds. Also, the cheesecake was delicious the first day, but MUCH much better after sitting, as it really set up as a cheesecake instead of being more like a pie. So delicious! SOO great for the holidays too--HIGHLY recommended!

Baked Potato Soup

This soup was SO delicious! Friends and family gave RAVE reviews, yet I did make a few small changes--I used four pieces of bacon, and I sauteed the onion in the same pan I cooked the bacon in. I also substitued about three teaspoons of garlic powder instead of garlic (I don't use garlic much so I didn't want to have to buy two huge things of garlic). Since I used the garlic powder, I didn't use much salt-just a pinch. I also used 8 oz of sour cream and 8 oz cream instead of the half & half. I was only going to use 1/2 Cup of each but I just finished the rest of each--made it super creamy and yum! At the very end, I added four pieces of bacon, and about a cup of monterey jack & cheddar cheese *not a cup each, one cup together* and garnished with a bit more cheese :) So delish! I served it with homemade garlic bread (toasted bread/baguette, butter & garlic powder-so easy!) This recipe was SO easy to make and I'm going to teach a bunch of my friends how to make it! Oh, one more thing-- the potatoes are super crunchy, so I think next time I'll microwave them for a bit longer and make the chunk/cubes of potato smaller. Otherwise, so great!
