Pumpkin Muffins with Streusel Topping

Delicious! Made 24 full muffins for me - again, as others have said, that may just be the size of my muffin tins. Also doubled the streusel as other reviewers suggested. They're absolutely delicious!

Yogurt, Sun-Dried Tomato, Walnut, and Basil Dip

Excellent! The only change I made was to add some fresh grated pecorino romano (hence 4 stars instead of 5), and it was excellent! Perfect accompaniment for my veggie platter, and I'll bet it's good with crusty bread too^_^

Mom's Macaroni and Cheese

I give it 3 stars because it's a good base recipe, but I prefer to use good-quality sharp cheddar (not a fan of processed cheese product) and add some onion powder, white pepper, and dry mustard to the roux. Again, though, great base recipe for getting the sauce to the perfect consistency!

Raspberry and Almond Shortbread Thumbprints

The ONLY change I made was to add about a 1/4 tsp of salt because that's just how I like my cookies, but I LOVE the raspberry jam and almond extract! Oh, I also left off the glaze - not a fan of glazes. Great base recipe with a lovely interpretation!

Oatmeal Pancakes

My substitutions are the only reason I don't rate this 5 stars - I just don't think it's fair to rate something a 5 if you've made significant enough changes. That said, this was an excellent base recipe! My subs: whole wheat flour instead of all-purpose, added a tad more sugar, added about 1/2 tsp brown sugar, used almond milk in place of buttermilk. Also ended up using 1/2 quick oats and 1/2 old-fashioned oats because I didn't have enough quick, and I messed with the proportions just a bit because I needed 3 servings, but I didn't increase by much and we had plenty! They were absolutely delicious!

Summer Herb Pesto

I came across this recipe and happened to have ALL of the ingredients in my pantry and garden - including the herbs - so I tried making this today. OH MY LORD is it delicious! Now, I didn't measure everything out exactly (kinda eyeballed the oil and herbs), but it turned out beautifully. When I first tasted it, I was a little put off by the strength of the garlic (raw garlic always has a little bite), but once I put it over pasta, it was absolutely delicious. The only thing I might try differently next time (as this recipe is excellent on its own) is lightly roasting the garlic first to take away that bite.

Creamy Carrot Soup

The only changes I made to this recipe were to use a sweet potato and fresh rosemary from my garden. OH MY GOD this is awesome! It's thick, creamy, and absolutely delicious. Make sure to use fresh carrots, either organic or locally grown carrots - they'll be sweeter.

Cappuccino on Ice

Delicious! This was my first time brewing coffee at all, let alone making an iced cappuccino. It's sooooo yummy! The only change I made besides using hazelnut coffee was to use almond milk instead of half-and-half since I didn't have the latter. The condensed milk really makes it wonderful, though! Sorta reminds me of the cappuccino frio I would get in Rome a few summers back...though they brewed their coffee/espresso just right and it was creamier^_^

Fab Summer Blackened Chicken Salad

Only used sun-dried tomatoes and spring mix since that's what I had on hand, but this is easily one of the best salads I've had in a while. The dressing is easily my favorite part! The whole dish is delicious the next day, too. I have a lovely, slightly tart white wine with it; it goes well.

Jo-Ann's Power Bars

In. Credible. I used mixed fruit and walnuts. They are sooooo moist and chewy! Much better than any store-bought granola bar I've had. I actually feel healthier when I eat them. They make a great snack for school/work!

Biscotti

This is a WONDERFUL basic biscotti recipe. Use it as a base recipe and add what you want. I did do what other reviewers suggested and used vanilla and almond extracts instead anise (which I didn't have in my pantry), and I like the sweet nuttiness it had.

Fluffy Pancakes

Amazing texture! They were so light and fluffy, and they absorbed the syrup well (which I find very important in a pancake). My only "thing" is that they are a bit tasteless on their own; have to add some vanilla and/or cinnamon. Great basic recipe though, and I'm grateful for the info on souring milk!
