Roasted Garlic Mashed Potatoes

Very simple and great flavor. I would recommend only to those who absolutely love roasted garlic. I added an additional head of garlic to my batch, it was well received by those who loved garlic. Next time I might replace the milk with buttermilk or sour cream for a different flavor.

Sweet Potato Pie I

I was extremely happy with this pie, but I made some changes due to my personal preferences. First, I made my own crust. For me, home made crust is a must have! I used a pasta frolla recipe with a hint of lemon zest. I also used a tart shell. So I blind baked the crust before filling it and baking it again. Instead of boiling, I baked my sweet potatoes. They retained their original flavors and stayed a pretty orange. I also used 1/2 cup brown sugar + 1/2 cup white sugar instead, and also replaced the milk with evaporated milk. I used my kitchen stand mixer to ensure the potato mixture was smooth and whipped. These changes made one of the tastiest sweet potato tarts I've ever made. I used my left over filling to make mini tarts. Fantastic!

Turkey Enchiladas

These were exceptional, but I definitely changed it to suit my tastes. I started out by sauteing onion, red bell pepper, and jalapeno. Then I cooked the turkey meat in the veggies, adding cumin, salt and pepper. I also fried the corn tortillas and dipped them as suggested, they were really good that way! Best homemade enchiladas I've had yet.

Easy Vegetarian Red Beans Lasagna

Very good dish! I doubled the red beans and diced tomatoes to make the filling thicker as well. I prefer it that way. I also used mozzarella cheese instead, it's cheaper and still tasted great. The white sauce on top is a nice touch. I recommend this dish! My family of non-vegetarians thought it had good flavors.
