Edamame-Stuffed Wontons

These were excellent! I made them for my brother and he took the rest into work the next day and asks for them all the time. I made up a bunch and froze them for him and he said they turned out great.

Amazing Ribs

I did these in the slow cooker the whole way and they turned out really great. I did them for 6 hours so that the meat was just coming off the bone and they were really good!

Rolled Buttercream Fondant

I made this for a cake class and it turned out alright. I was really proud of myself for making a fondant that actually tasted good. Upon taking it to class, it kept breaking and tearing, as my instructor said rolled buttercream was prone. She said to put it into the fridge for an hour and it should clear that up, but not to leave it in lonoger than that because it would get too hard and begin to dry out. I subbed butter for shortening, and that may have something to do with it, but I seriously doubt it. Overall a good recipe and very easy to make.

Chicken Wellington Casserole

I thought this was pretty good, but it needs something more to it. I used my own crescent rolls (to cut out trans fats), which turned out interesting. They were really fluffy and seemed to literally absorb all of the stuff below them, which turned it into a really dense casserole.

Easy Crescent Rolls

These were really easy to make and turned out fine. The only problem I had was that the dough didn't really do anything in the fridge, so punching it was pointless and they didn't rise during the 45 minute rest period. So they turned out more like regular dinner rolls, but were very good anyway.

Couscous Royale

I played with this a lot because my husband is not a big tomato fan. I used 2 large chicken breasts and also cut out the sausage to make it lower fat and lower calorie. It was a really yummy dinner and even my picky little guy seemed to like it.

Slow-Cooked Chili

I used 1 can of diced tomatos and 3 cans of beans, which turned out fine for us (my husband is not a big tomato guy). Next time, I will double the tomato sauce to give it more of a soupier texture because this was pretty hearty (as in, not as soupy as I like my chili).
