Tortillas II

I doubled the recipe and added a tsp of sugar. Mixed it all up in my stand mixer with dough hook. Didn't need to floor the counter to roll them out. Excellent recipe.

Waffles I

Reviewed: Nov. 10, 2013
Good but better with changes: separate the eggs, beat the whites and fold them in at the end. Use a little less milk and add lemon juice or vinegar to make the 13/4 cups. I used 1/4 cup of sugar. Less is fine, bit 1 tbsp is not enough. I used half whole wheat and half all purpose flour. And I think that's it. Good base recipe to play around with :)

Vegan Cupcakes

Reviewed: May 24, 2012
Good recipe. Tasted like normal eggy, milky cake. Changes I made: I reduced the flour to 1.5 cups and added 1/2 cup cocoa powder. I added a tsp espresso powder. I used canola oil instead of coconut oil, because it's what I had. made about 40 mini cupcakes, baked at 350 for 10 minutes. tasty!

Roasted Carrot Salad

Reviewed: Apr. 9, 2012
This was an excellent idea. I followed the recipe pretty closely, but felt it was lacking in something. I will use this recipe again, but will tweak it I think. Really great idea though.

Coconut Macaroons

Reviewed: Apr. 7, 2012
I read the reviews and some said to use sweetened coconut and others said unsweetened so I used hald sweetened shredded coconut and plain old unsweeted medium coconut and they turned out the perfect sweetness and texture. Used the fudge filling recipe from the fudge puddles recipe on this site and put mini eggs in the center for eeaster nests. super cute and easy. I whipped the egg white until soft peaks formed before adding it. also mix the extracts into the condensed milk.

Megan's Granola

Reviewed: Apr. 3, 2012
Yum! I didn't feel like spending a fortune on all the brans etc, so I found a bad of "porridge oats" that had bran, wheat germ and rolled oats already together. I used that in place of the oats and brans etc. I halved the recipe and needed to add about five minutes to the time in the oven. Don't mess with it when it comes out of the oven. just let it cool on a rack so it can clump up as it cools. I didn't add the raisins 'cause those can be easily added to each bowl but not so easily picked out :)

Mom's Best Peanut Brittle

Reviewed: Mar. 31, 2012
This was really good! I had never made brittle before. I was terrified to try it because it's one of those things that's really easy to make... and really easy to ruin :P So I manned up and tried it with chopped pecans instead of peanuts. I surprised myself and DID'NT burn it and everyone loved it. Thanks for a great recipe!

Sweet Restaurant Slaw

Reviewed: Mar. 31, 2012
I used half the sugar called for in the recipe and it was still quite sweet. I think if I had used the full amount of sugar the coleslaw would have been thrown out. I used an extra Tbsp of vinegar and that was good. I will definately make again with these changes.

Ultimate Baked Beans

Reviewed: Jan. 5, 2012
I didn't have any bacon so I made it without. I added some diced celery too and added an extra 1/4 cup brown sugar. I didn't use the canned mushrooms because I don't like them. I used baked beans and two cans of black beans. I only baked for one hour. They were perfect and delicious! Thanks for the recipe. I'll definately make again (with bacon) :)

Curried Rice Pilaf

Reviewed: Jan. 2, 2012
REALLY good recipe! I used a couple tbsps of olive oil instead of butter. Chopped a half a white onion, 1 stalk of celery and grated a carrot in additon to the green onion. I just sauteed the veggies in a pot then added the rice and broth when the veggies were soft. Bring to boil, reduce to low and simmer for about 18 minutes. stirred in the raisins and nuts (I used walnuts) and the rest of the green onions. Thumbs up from hubby, and our 5, 4, 2, and 1 year old kids! Great recipe!

Fudge

Reviewed: Dec. 7, 2011
You must try this!! I made the recipe exactly as written only I put it in a 9x13 pan. Then I immediately made a thrid batch with peanut butter chips then sirled it into the chocolate fudge. OH MY GOODNESS! so perfect! I imagine it would be better to make the two kinds of fudge at the same time. I'll do that next time.

Red Skinned Potato Salad

I used three pounds of potatos instead of two and two cups of mayo would have made potato mayo soup. Maybe I'm just not used to soupy mayonaisie potato salad, BUT the bacon redeemed it.
