Stuffed Peppers Italian Style

Just like my Italian grandma used to make......except....black olives instead of green, went heavier on the olive oil, onion & garlic. Added approx 1/4 c parmesan also. Stuffed whole cubanelles as she did. Took me back to my childhood - thanks for the recipe!

Eggplant Rollatini

Being of Italian descent - Mom & Gramma gave me a tip to make this dish so much easier. First slice egplant lengthwise 1/8". Coat slices w/flour then dip in eggwash. No breadcrumbs! Then fry in oil. Cool & drain on papertowels. Stack slices when cool - wrap in foil then into a freezer bag & into freezer. When you want to make this dish just defrost. The hard part is over!!

Ho Ho Cake

Made this yesterday. Followed recipe to the tee except to add vanilla to the creamy filling. Made it in bundt form - cut in half w/filling in the middle - glaze on top. Excellant cake - alot of steps but will make again for a special occassion.

Sticky Monkey Brains

Just made this for Sunday mornig breakfast - OMG - sooo good! Only had one can of biscuits so I made it in 8" cake round pan. Just hubby & I so it was plenty. Go heavy on the butter & brown sugar to make it stickier.

Potato, Broccoli and Cheese Soup

Great soup!!! Made this almost as written but I started off saute-ing the onions in the grease of four strips of bacon that I fried crispy to crumble on top before serving. Removed some potatoes before using my immersion blender to creme the soup. Added them back with a bag of frozen broccoli that I cooked in the microwave (didn't want the green soup). Added less cheese than called for and then a good splash of half & half. It seemed to need some creaminess. the end result was fantastic. Great soup for a snowy day.

Manhattan Style Clam Chowder
