In my daily life I am trying to learn how to cook healthy dishes that are quick and easy. What draws me to Allrecipes, however, is a weakness for sweet baked goods. I love modifying the recipes that I find here.
My favorite things to cook
I specialize in baked desserts for people who have dietary restrictions. The majority of what I bake does not contain dairy, wheat, or trans fats. I do not use excessive sugar, only just enough to obtain a nice flavor.
My cooking triumphs
pumpkin muffins, oatmeal cookies with chocolate chips, fresh cranberries and walnuts (yum!), molasses cookies, banana cornbread, lemon cake with chocolate-coconut ganache topping, maple-ginger cookies, shortbread cookies
My cooking tragedies
The first time I tried to make shortbread, I did not want to use butter or margarine with trans fats, so I ended up using canola oil, oat flour and brown sugar—big mistake. The goop bubbled in the oven for what seemed like it would be forever before finally settling down into a burnt heap of greasy crumbs. Recently, I found a margarine that does not contain trans fats, so I used it instead of canola oil. The result was satisfying shortbread. Whoohoo!
